i think they burnt on top because you overfilled the containers and then maybe because you opened the oven while they were baking you stopped them from rising. i always keep a little space in the containers so cakes can rise and i make sure not to let the hot air out of the oven so they don't sink. hope this helps and i'm sure they'll be perfect if you try again with ramekins. :)
