Super Creamy Instant Pot Rice Pudding

  • Instant Pot Rice Pudding. An easy and VERY delicious Instant Pot Rice Pudding! The secret is in the sequence, the right combination explodes the rice pudding with creaminess and flavor.
    1 cup rice (I used Mahatma rice, a starchy rice, unwashed to keep the starch)
    2 cups water
    4 cups whole milk
    1 cup heavy cream
    1 1/3 cup sugar
    4 large eggs
    1 tablespoon vanilla
    After your initial test, you can add additional milk in half cup increments to make it thicker, or subtract half cup to make it thicker.

    I just made the recipe and I love it. This reminds me of the stuff I always buy in the store because I couldn’t make decent rice pudding until now. The only change I did was add 2 extra egg yolks to give it a more custard feel.

    Made Friday and it was all you would expect it to be - creamy, and delicious. Worth the time (mostly waiting) and several steps (all easy) so I and my granddaughter Ela give it a thumbs-up!

      Washing rice has a minimal to no effect on removing arsenic from rice because the arsenic has been absorbed by the rice. However rinsing white rice will remove beneficial nutrients like iron, niacin and folate. Rinsing rice is common in many cultures and recipes mainly as a means to remove starch from the rice and produce a less starchy end product when thats your goal. That would seem to be opposite of the goal in making rice pudding or risotto.

      Hi, remember, it is NOT a crock pot, but the electric PRESSURE cooker. The are big name brands of those including the Instant Pot company and more. I did say the settings - the settings are only one - the time. Most electric pressure cookers only have a high, but the Instant Pot does have a low setting too, but it is on high, for the times I mention in the video. The other variable is whether you do an "instant release" or a natural release. I say that too in the video. Instant release is when you let the steam out when it is done, a natural release is when you wait for it to release naturally with no help or interference from you :) Other than the time and on high, there are no other settings. Learn to set your time manually instead of using all those other buttons as MOST people set their cooking time that way. The other buttons are just variations of your time, so go straight for it so you can know what timings are for all the different foods. i suggest you keep a record, I do cause I forget how long for chicken vs how long for eggs vs how long for ribs and so on and so on :)

    Well, I made a batch and it was most excellent. I had to adjust the cook times quite a bit. Apparently my cooker doesn't run as hot as yours. I ended up having to do the first cook of the rice for a total of 10 minutes. I think part of the problem was that I ran it through the first time at low pressure. The second 5 minutes was at high pressure. Then after adding the milk and cream, I ran it 8 minutes at high pressure and that seemed to work out pretty well. Thanks for the video I now have a treat that will last a week or so in the refrigerator. 🙂🦆

    Washing the rice is to remove arsenic. It would also reduce gumminess.

    this rice pudding was epic! i did it exactly as shown- but i only used a half cup of sugar, since we wanted to eat it warm, with a sweet topping.

    Peter, I love rice pudding. it is a staple that I great up with. Another treat that I consider the same level is bread pudding. It was a treat developed during the second war with all the rationing. I am going to have to make some pudding for myself now! Yeah, what is with the apron... You could just paint it on ;)

    I love rice pudding. It's my comfort food. When I got my IP it had a recipe for rice pudding made with coconut milk and pineapple. If you ever had a Pina Colada that's what the pudding taste like. I'll most differently be making your rice pudding soon and let you know my thoughts as to it taste. There goes my diet!

    You didn't say how long you cooked it after putting in the milk and cream. I'm guessing another 4 minutes, but I'm not sure. I need to try this.

      Yes, you are right. 4 minutes rice, water and sugar.
      Then 4 minutes again adding the milk and cream. Both are totally natural release (wait till you can open the top). The first time with only one cup of water I had to wait about 20+ minutes for natural release. But the second time it took double that because there was a lot in the pot. That would be a good name for a TH-cam Channel "A Lot In The Pot" lol :)
      The batch you watched me make yesterday is QUITE thick today as a leftover in the fridge. No biggie, I can stir in a 1/4 cup of milk (or less) and it will still be awesome. But I think I would put in 3 eggs the next time. Last night though, it was perfect and 80 percent of it was gobbled up :)

    I don't know why you say "most people like their rice pudding cold", thgat must be an American thing, as in UK we most undoubtedly serve it piping hot, with a nice skin covered in nutmeg! Thanks for the recipe anyway. God bless you 🙂

      As a Greek family we do in fact eat it both ways. But in restaurants it is usually always served cold with whipped cream. They don't know what they are missing lol :)

    I made this along with you was I supposed to cook rice low pressure twice for 3 min.?

      I cook the rice for 3 minutes and do a natural release. All of it is at high pressure, I don't think I have used the low setting for anything ever! I almost don't even remember it is there lol. Only the IP pressure cooker has that option, the other machines I have do not offer that setting so I don't think I would use it anyway to respect the people that have other brands of pressure cookers.     rinsing the rice is to remove the arsenic and other impurities from the rice not to improve the actual taste of your pudding. Looks great though.

      I make rich pudding l add carnations milk and condensed milk l never add eggs and it tastes good my family loves it why do you add eggs in rice pudding l enjoy your cooking.

    Did you say add salt ?
    I made this & the rice was not completely done.
    Not terribly though just ever so slightly. I used long grain rice. It is deliscious ,very creamy.

      After all that time the rice was not cooked? Then switch gears and use timing that would be good for your individual machine as it may be lower temperature for some reason - also check if you have a LOW/HIGH that you are set to the high setting. Do a test case, put in a cup of rice and a cup of water and set the timer to ONE MINUTE, when it is done WAIT 10 more minutes. Then open. The rice should be cooked nicely with no hardness like uncooked rice. If it is not cooked, then adjust that one minute setting until that test yields cooked rice. Then you will know how your specific electric pressure cooker works. As for the add salt, you can add like a half a teaspoon of salt if you like. I am on a low carb diet now and am adding salt to amost everything lol. I used to add salt to nothing before!

      @@PetersKitchen thanks so much for your reply back . Usually when I make rice in my Instant Pot ...I cook for 12 minutes and then I quick release. And eat immediately. And it is thoroughly cooked. Next time I make the pudding I'll try for 5 or 6 min. & the natural release.
      The pudding made yesterday was just ever so slightly undercooked. It was extremely edible. And it won't be wasted !

    why did mine say food burn after the second 4 minutes i dont know what to do from here I havent seen the damage yet but I guess all i can do is wait for the natural release and see what happened i followed every step except i followed my own recipe which is identical to yours aside from the egg count and i used sweet condensed milk along with 3 or 4 cups of milk. So any idea on why its saying food burnt??

      Happy New Year!
      So this is the funny part - "I followed your recipe EXCEPT" heh heh, so you didn't follow my recipe, you did your own thing ha ha.
      However, that has nothing to do with an error message. An overheat message usually comes because of something you did wrong, OR the unit is broken, OR indeed it did overheat!
      With 5 cups of cold milk in the cooking insert I don't see how ANY brand of machine would have an error. The overheat warning, or in your machine "FOODBURN" message, would only come up if the element on the bottom under your cooking internal pot gets too hot. Since I am not there but you are, figure out why the heating element got too hot. It would get too hot because there isn't enough liquid in the pot, OR if you have something stuck under the cooking inner pot, or if the sensor is broken. Of course I am pretty sure you ARE USING the inner pot, I did hear of a few times over the years where someone didn't use the inner pot that is the part you put any food into and just put the food into the machine without using the cooking pot - but I am pretty sure that wouldn't be you :)

Mine without the instant pot is the same recipe anyhow except I use 2 eggs...so I made it for a second time and it did it again. As soon as I put the milk and cream it cooked for about a minute then says food burnt and this is a brand new unit. I have the Viva not sure if that makes a difference. Last time it didn't burn just got the warning. Maybe the rice is sticking to the bottom. I use jasmine maybe that's the problem. I can tell you when I followed your video it was the best one I have ever done so thank you!!

      I've used different rice myself and it didn't matter.
      Just to be sure - The sequence is:
      1 cup of rice, 2 cups of water - cook 3 minutes in pressure cooker mode allow for a natural release.
      Then when there is no pressure, open the top and add the milk and cream to cooked rice. I stir at that point to mix the already cooked rice in the pot to the new added milk. Then I continue with the recipe.
      If you are putting fresh milk and cream and it shuts off in 1 minute, I would say there definitely is a problem. You should be able to put that much milk into the pot STRAIGHT at any time and cook for whatever time you want. Not meaning you should cook milk for no reason, just saying adding cold milk into a pressure cooker machine and it errors out, that isn't right for any reason at all. I would keep an eye on that pot or change it.
