Sunny side up and soft whites all around. Somebody serves me an egg with crispy brown edges it's going back. It ain't that hard. Just enough heat to make 'em bubble, (in butter!), then pull 'em off the heat.
Or you could just cook the eggs on a proper temp in butter and learn how to flip them at the right time. Cooking fried eggs over easy is not this hard. If I get a crispy white or even a partially cooked yolk, it's going in the can. Why is this always made so difficult? Lube the pan with butter, right temp, flip. Perfect egg. Good grief!
The way to well cooked fried eggs to break the yolk as soon as it hits the pan. I learned this years ago when news media warned of undercooked egg yolks could be contaminated with salmonella. That's still true today and I have breaking the egg yolks ever since. It cooks the entire egg evenly.

The best fried eggs on lard only! Crispy edges and top around the yolk kook with pouring hot lard from the pan.

There is always putting a lid on the pan, or basting the egg with the butter you fry the egg in!

You can run water on the inside of the lid give it a light shake then place the lid on the pan this quickens the steaming process ,
No doubt, soft boiled is the way to go.

I don’t understand why they think it’s a big deal. I don’t use a spatula at all I just flip the eggs over with a flick of the skillet.
Steam frying is my preferred way to cook duck eggs, keeps them soft, never rubbery.

It's no longer Fried Eggs if you Steam baste especially if you put the lid on from the beginning. You now have: Steamed Eggs.
