9:25 there's a various ways of doing sinigang but the most common way is using sampaloc (tamarind) depends on what part of the Philippines you are...our family use sun dried kamyas to make the broth sour (sorrel or bumbling plum) and some do use guava...

Ox tail is a very common ingredient of kare kare though. It is usually made with ox tail and tripe. It is rare for kare kare not be made with ox tail.
