Amritsari Chicken Curry Recipe:
For the Chicken Marination:
Chicken Curry Cut - 1 kg
Ginger Garlic Paste - 1 tbsp
Kasuri Methi - 2 tsp
Coriander Powder - 1 tsp
Kashmiri Red Chili Powder - 1 tsp
Turmeric Powder - ½ tsp
Ghee - 1 tbsp
Salt - ½ tsp
Curd (beaten) - 2 tbsp
For the Masala:
Black Peppercorns - 1 tbsp
Coriander Seeds - 1 tbsp
Black Cardamom - 2 nos
Green Cardamom - 5 nos
Cloves - 4 nos
Fenugreek Seeds - ¼ tsp
Cumin Seeds - ½ tsp
Mustard Seeds - ½ tsp
Other Ingredients:
Oil - 2 tbsp + 2 tbsp
Ghee - 1 tbsp
Bay Leaf - 1 no
Green Chilli (finely chopped) - 2 nos
Onion (finely chopped) - 3 nos
Ginger Garlic Paste - 1 tsp
Tomato (chopped) - 3 nos
Curd (beaten) - 3 tbsp
Water - ½ Cup + ¾ Cup
Salt - ½ tsp
Coriander Leaves (finely chopped) - 2 tbsp
Butter (cubes) - 2 tbsp
Instructions:
For the Chicken Marination :
1. To a bowl, add chicken and the remaining ingredients required for the marination.
2. Mic till all the ingredients combine evenly and the chicken is coated well.
3. Let the chicken Marinate for 30 minutes.
For the masala :
1. Heat a pan, add the spices required for the masala and dry roast them till it turns aromatic
2. Transfer it into a mixer jar and make a fine powder.
3. Keep it aside for further use.
Remaining Steps :
1. Heat a pan, add oil.
2. Once the pan is hot, add the chicken and grill it on a medium flame for 5 minutes on each side till grill marks appear on it.
3. Transfer the chicken to a plate and keep it aside
4. Heat a kadai, add oil and ghee.
5. Add a bay leaf, green chillies and chopped onion.
6. Saute till the onion starts to turn golden brown.
7. Add ginger garlic paste and saute for a minute
8. Add 1 ½ tbsp of the dry roasted masala and mix for a minute
9. Add the tomatoes and saute for 4-5 minutes.
10. Add ¼ Cup water and keep mixing on a high flame till the tomatoes turn soft and mushy
11. Add curd and mix well for a minute
12. Add ¾ Cup Water, mix well.
13. Add salt and mix well. Bring the gravy to a boil
14. Add the grilled chicken and mix till it combines well with the gravy.
15. Bring it to a boil, cover and simmer it for 10 minutes. Stirring occasionally
16. Add butter, cover and simmer it till the butter melts.
17. Open the pot, give the mixture a mix.
18. Add chopped coriander leaves, mix well.
19. Give it one final boil and take it off the flame.
20. Serve it hot with roti or rice

I was about to write the same when saw your comment😅
I made this and tbh was not happy for the amount of prep work I did this was unfortunate not the par and the flavors didn't mix well and there was just too much ghee or oil, waste of masala.
Just call it chicken curry FFS , just manipulating spices differently and giving a prefix doesn't make it any better . This is just a normal curry 🤣 stop pretending as if you're making something different at least.
