That dish is call Ying Yong beehoon and flat rice noodle (thick and thin). Contrast of crispy thin and fried soft flat. See famous Sang Har Sang Noodle video of 40 years old restaurant in KL.
Black Maria, the mee hoon is deep fried but very oily but crispy like crisp. Unfortunately old age so cannot handle oil so fried with like dry fried but sloooooow fire.
Dear Jen Lee, Yee Mien is egg noodle that has being preheated fried before packaging. It's same treatment as those small package noodle per portion being fried beforehand. Just Google it. It's hard to find yee mein in London so I look out for those small packet it does say yee mein if stock comes in. Those big coil ones ...once in a blue moon.

Taste too different from what outside selling.
So afraid of using oil in cooking, might as well not cook at all.
