I haven’t tried it; but I think you can do beginning and ending letters in different colours, just cover the first set of letters with a tape after filling them with gold colour, then fill rest of the letters with silver. Using 2 colours vertically within the same letter would very difficult I think, unless you write at a very big size
No, it won’t be possible to use acrylic colour in the same way as we use gold wax, but you can fill the engraved part using acrylic ink with pointed nib, but you will have to very precise.
Yes risk of breakage is there, so it's always better to wear protective Eyewear, wear a mask, Don't give too much pressure to the engraver. And be cautious

It is permanent, doesn't clean on washing.. but one shouldn't scrub the too much.. wash gently

The engraved part is deeper than the surrounding glass surface, so the colour in it does not get removed when you rub a napkin or cloth on the glass
