The Ultimate Sweet and Savory Bacon Jam Recipe Ever

This is my recipe for Bacon Jam, its great on anything especially burgers but I am telling you right now it will be gone before you know it because its that good.
Bacon Jam Recipe
2 pounds bacon
2 large onions
6 cloves garlic
1/4 cup Bourbon
1/4 cup sherry vinegar
1 tablespoon balsamic vinegar
1 cup packed brown sugar

I just finished making this. I'm not sure we'll have any left for burgers tonight. I can't quit 'tasting' it. Subbed aged Chinese vinegar for balsamic. Crazy good.
