I make bacon jam just like that, diff hot sauce and little things like letting the onions go longer that but very similar. Have never put it on a burger, will try thanks Chef.

This guy is such a f*kn baller 🙌! His techniques, approach, and balances of flavor is to be admired! We see sweetness, acidity, fresh herbs, not overly cooked garlic, spice, salty, smokey... I'm literally commenting whist watching saying the only thing left is cream or richness... and there he does it with dukes mayo and more acid.... Then buns toasted 😋 perfection. Hands ✋️ 👐 down one of the BEST chefs/bbq master on YT. His deep and complex flavor profile is so sick!!! So complex. Brilliant 👏 👏 👏

I've worked in multiple restaurants while going through medical school, and now can afford the highest of restaurants.... your skills are something to be admired! And I'm a harsh AF critic as you know lol. At one point I was going to drop outta medical school and be a professional chef. But what you do is so perfect. Please 🙏 don't change a thing.

I'm running into more friends who are vegetarian and vegan. It's not standard bbq but I would love to get ideas or inspirations on something I could make for those folks that could imbue a bit of the smoked meat journey. I've seen the Jack fruit "pulled pork" ideas, but always on the look out for more thoughts.
