I’ve been making jerky for a while I used to do the same thing until I realized that skirt streak is the superior choice for prep and cost I can get twice as much meat for the same price and I don’t have to slice it just trim the fat off some times and just ask the butcher for slices that are thin/with the least amount of fat on them
@ChristopherFalletta-rh9jf absolutely i use all kinds of meat usually what is cheap. There is a definite difference in flavor. I use all kinds of different spices and flavors as well.

I use a cabelas meat grinder with jerky slicer attachment and it slices 3/8 thick
