  • Fish Masala
    Ingredients
    • 500g fish, cleaned and cut into pieces
    • 1 tsp chili powder (for marination)
    • 1 tsp curry powder
    • 1/2 tsp turmeric powder (for marination)
    • 1 tsp garam masala powder (for marination)
    • 3 tbsp oil (for frying)
    • 2 medium onions, roughly chopped
    • 2 green chilies, slit
    • A handful of curry leaves
    • 1/2 tsp turmeric powder (for masala)
    • 1 tsp chili powder (for masala)
    • 1 tsp coriander powder
    • 1 tsp garam masala powder (for masala)
    • Salt, to taste
    • 1/4 cup water
    • 1 tbsp ginger garlic paste
    • 1/2 cup curd (yogurt)
    • 10-12 cashews, soaked in water for 15 minutes
    • 1 tsp kasuri methi (dried fenugreek leaves)
    • Fresh coriander leaves, chopped, for garnish
    Method
    Marinate the Fish:
    • Clean and cut the fish into pieces.
    • In a bowl, mix chili powder, curry powder, turmeric powder, and garam masala powder. Rub this spice mix onto the fish pieces thoroughly.
    • Let the fish marinate for at least 15-20 minutes.
    • Heat 3 tablespoons of oil in a pan over medium heat.
    • Fry the marinated fish pieces until they are golden brown on both sides. Remove and set aside on a paper towel to drain excess oil.
    • In a mixer or blender, grind the onions into a smooth paste.
    • In the same pan used for frying the fish, add a little more oil if needed. Pour in the onion paste and sauté over medium heat until the paste turns golden brown.
    • Add the slit green chilies, curry leaves, turmeric powder, chili powder, coriander powder, garam masala, and salt to the pan. Mix well.
    • Add 1/4 cup of water to the pan to prevent the spices from burning. Cook this mixture for a few minutes until the oil starts to separate.
    • Add the ginger garlic paste. Cover the pan and cook until the raw smell of the paste disappears.
    • Add the curd (yogurt) to the pan, stirring well to combine. Let it cook for a few minutes.
    • Grind the soaked cashews into a smooth paste and add this to the masala. Stir to incorporate evenly.
    • Add the kasuri methi to the masala and cover the pan. Cook for another 5 minutes to let the flavors meld together.
    Gently add the fried fish pieces to the pan. Pour in a little more water if needed to get the desired consistency of the gravy. Cover and cook for 5-10 minutes, allowing the fish to absorb the flavors of the masala.Garnish with chopped fresh coriander leaves.Serve hot with steamed rice or Indian bread.Enjoy your delicious homemade Fish Masala! #food #cooking #recipe #easyrecipes #fish #seafood
