Lion's Head Meatball Recipe | Traditional Shanghainese Version | 红烧狮子头

    Recipe:
    1. Add hot water to ginger and green onions. Leave it beside for at least 10 mins.
    2. Peel a small pear and cut it into tiny pieces.
    3. Cut some green onions (only the green part) and add it into the meat.
    4. Add white pepper powder (1/4 tbsp), salt (2 tbsp) and sugar (1 tbsp) to the meat and mix it.
    5. Add an egg. Mix it.
    6. Add starch (2 tbsp), ginger onion water (4 tbsp). Mix it.
    7. Add cutted pear. Mix it again.
    8. Fry the meatballs.
    9. Move the meatballs into a smaller pot. Add ginger, green onion, 2 bay leaves, 1 star anise, sugar (1 big tbsp), salt (1/4 tbsp), light soya sauce (4 tbsp), oyster sauce (1 tbsp), hot water.
    10. Cook the meatballs for 1.5 hours.
    11. Get the meatballs out and serve it with vegetables (could be pak choi, lettuce, Chinese cabbage etc.).
    12. Add starch (1 tbsp) into the soup to make the sauce.
    13. Pour the sauce on the meatballs.

    800g ground meat (pork, beef, chicken. Whatever you like)
    1 small pear
    ginger
    green onion
    1/4 tbsp white pepper powder
    2 tsp sugar
    2+1/4 tsp salt
    1 egg
    3 tbsp starch
    2 bay leaves
    1 star anise
    4 tbsp light soya sauce
    1 tbsp oyster sauce
    lettuce
