    도넛반죽
    강력분 380g
    옥수수분말 80g
    설탕 60g
    소금 8g
    드라이이스트 10g
    버터 60g
    계란 1개반
    물 210g
    (계량제 5g)
    고로케 속
    양파 1개 (약 250g)
    피망 1/2개 (약 50g)
    당근 1/3개 (약 50g)
    맛살 2~3줄
    삶은 계란 3개
    삶은 감자 2개
    갈은 돼지고기 150g
    당면 30g
    빵가루 50g
    소금 1~2g
    후추 소량
    다시O 적정량
    마요네즈 80~100g
    제조과정
    1. 계란과 감자를 삶아주세요
    2. 당면을 물에 불려주세요
    3. 야채를 슬라이스로 썰어주세요
    4. 볶음팬에 버터를 두르고 갈은 돼지고기를 볶아주세요
    5. 돼지고기에 소금간을 조금 해주세요
    6. 돼지고기가 어느정도 익으면 썰은 야채를 넣고 볶아주세요
    7. 채에 받쳐 기름기를 빼내면서 식혀주세요
    9. 도넛반죽 전재료를 믹싱볼에 넣고 믹싱합니다
    10. 글루텐 100%로 믹싱합니다
    11. 1차발효 30℃ 60분
    12. 1차발효를 하는동안 식은 고로케 속 재료를 섞어줍니다
    13. 분할 50g
    14. 성형 (총 무게 100g)
    15. 성형한 반죽을 찬물을 묻힌후 빵가루를 묻혀주세요
    16. 2차발효 30℃ 약 40분
    17. 튀기기 전에 젓가락으로 고로케 가운데를 구멍 뚫어주세요
    18. 180℃ 기름에 앞뒤로 1분씩 튀겨주세요
