Well to be fair, they are in UK so that's just local slang. The waiter was clearly speaking english and understood their request, he just walked off for dramatic effect.

It's called Bolognese because it's made in Bologna the rest of Italy make Ragu sauce which is basically the same thing but don't tell the italians that!

Also, Bolognese sauce is good but usually I will eat it with a fettuccine or if being fancy it will be very good with papardelle. Why in UK they eat it with spaghetti? I get if that's all that's in the house, but with all the ground beef and pork, you are gonna want to prepare for cooking that anyways, so have a nice thick noodle on hand, no? 🧐

The brand name has an accent on the u but its facing the wrong way to the Italian spelling. That difference allows them to trademark it - at least in America / UK.
Because as you already said, it is comfort food and furthermore it's delicious. So why wouldn't you order it. I would spend a lot of money for a really good spaghetti Bolognese.
