- The fishing right now is better than it's been in many years, with speckled trout and largemouth bass crowding into the same areas in numbers that are almost hard to fathom.
This week, I had a blast catching them, along with a few redfish as well, and when I returned home, I cooked them using a recipe I got from Artificial Intelligence.

Recipe:
Lemon Dill Cream Sauce
Ingredients:
• 1 cup heavy whipping cream
• 2 tablespoons fresh lemon juice (adjust to taste)
• 1 tablespoon finely chopped fresh dill (or 1 teaspoon dried dill if fresh isn't available)
• 1 small garlic clove, minced (optional for a hint of sharpness)
• Salt and freshly ground black pepper to taste
• Zest of one lemon (optional, for extra lemon flavor)
Instructions:
1 Warm the Cream: In a saucepan over medium heat, pour in the heavy whipping cream. Let it heat until it just begins to simmer; do not let it boil.
2 Add Lemon Juice: Once the cream is warm, add the lemon juice. The acidity of the lemon will help to thicken the cream slightly as it reacts with the dairy.
3 Incorporate Dill: Stir in the chopped dill. If you're using dried dill, it might need a bit more time to infuse its flavor.
4 Season: Add minced garlic if using. Season with salt and pepper to taste. If you like a stronger lemon flavor, add some lemon zest here.
5 Simmer: Allow the sauce to simmer gently for about 5 minutes, stirring occasionally. This helps the flavors to meld together. Be careful not to overcook as it might cause the cream to separate.
6 Adjust Consistency: If the sauce is too thick, you can thin it with a bit of fish stock or water. If too thin, let it simmer longer until it reaches your desired consistency.
7 Serve: Once the sauce is done, remove it from the heat. You can either pour it directly over your cooked fish or serve it on the side.
This sauce complements fish like salmon, cod, or halibut beautifully due to the rich creaminess combined with the fresh, bright flavors of lemon and dill. It's versatile enough for poached, grilled, or baked fish. Enjoy your meal!

I limited out this weekend both days in south Louisiana, plus a few reds. Everything I caught was on Matrix Shad Limbo Slice and Holy Joly. On Death Grip jig heads. Going to go looking for the zimmer swimmers tonight.

Looks like a great day of fishing. I've made lemon cream sauces for pasta and I might suggest zesting the lemon with a microplane And letting that simmer in the cream. Then add juice to your liking, as some lemons are more bitter than others. Still hard for me to watch bass be harvested

Doesn't really fit with the focus of the channel. But I use a pellet smoker. I know BBQ purists look down at them, but I'm not in it for pride. I just love smoked meat!

Limbo slice is my color when I'm fishing water that's deeper than about 10 feet. It shows up well at depth.

Speckeled trout is my favorite fish! I used to catch them all the time off of Bolivar peninsula. Getting too old to catch them now. I would love to have some. Can you buy Specs anywhere? I would pay a pretty penny for some Specs.

How are you able to fish that zimmer swimmer with an exposed hook and not get ate up with grass? I fish the grass on Escambia River in Pensacola and I feel like I'd get grass on my hook every time. Any tips or suggestions? Would love to try the zimmer swimmer.
I explain that around 21:00. If the grass were more scattered, I'd throw it Texas-rigged, which I do often.

Hey Todd, I see you tagging a ton of fish all over southern La. Having never caught a tagged fish I assume there’s information to report the catch of a tagged fish. Is this to track migration patterns? Also do you keep track of which tags you use where?
It's to track both migration patterns at growth. Yes, I submit where the fish was caught and it's length.

Bass can't get big down here because everyone keeps them ....
Wrong the limit use to be 7 fish 14inches for years and it changed to 10 fish any size bc they were over populated and no fish bigger than about 8-9 pounds. It’s what they feed on down here and not a lot of deep water. I catch 4-5 pounders all the time been doing that since the 80s.
They’re competing with redfish and trout they can’t get big
