I bought a 4.5cfm vac pump and worry that it might be too powerful for the very basic projects I will be doing. It would help me to know the component names

Sure. The pressure outside the apparatus has no bearing on what goes on inside the apparatus except in what the pump that provides the vacuum is able to do. Higher pressure surrounding the apparatus might make the pump have to work harder to reduce the pressure inside. Less pressure outside the apparatus should make the pump have an easier job. If the pressure is low enough, you may not even have to lower the internal pressure further. It depends on your needs.
So many concessions to poor resources. Water pressure too low? Get better water pressure! System leaks? Get better glass! Don't have Claisen adapters? Get some! Do it right!

It sounds like one of two things happened. Either you were heating before you applied the vacuum or the material is viscous and it foamed rather than boiled nicely. Foaming is a problem I have had with viscous materials. A very large flask, let's say 100 mL for a 5 mL sample, will not prevent the foaming, but it allows the material to foam without expanding up into the still head. Practical problems like this sometimes requires playing around with equipment until you find something that works.
