    Bengali Niramish Jhinga diye Sim Alur Torkari Recipe (Bengali Vegetarian Ridge Gourd, Broad Beans, and Potato Recipe)
    Ingredients:
    ---------------------
    2 medium-sized ridge gourd (jhinga), peeled and chopped
    150 grams broad beans (sim), trimmed and chopped
    2 medium potatoes (alu), peeled and cubed
    2-3 green chilies (hari mirch), slit
    1/2 teaspoon turmeric powder (haldi powder)
    Salt to taste (namak)
    1/2 teaspoon red chili powder (mirchi powder)
    1 teaspoon cumin seeds (jeera)
    2 tablespoons mustard oil (sarson ka tel) or any cooking oil
    Water as required
    Instructions:
    ---------------------
    1.Preparation:
    ------------------------
    Peel and chop the ridge gourd into medium-sized pieces.
    Trim and chop the broad beans.
    Peel and cube the potatoes.
    2. Tempering:
    --------------------
    Heat mustard oil in a pan until it starts to smoke slightly.
    Add cumin seeds and let them splutter.
    Add slit green chilies and sauté for a few seconds.
    3.Cooking the Vegetables: -----------------------------------------------
    Add cubed potatoes to the pan and sauté for 5-6 minutes until they start to turn golden.
    Add the chopped broad beans and ridge gourd.
    Mix well and cook for another 5-7 minutes.
    4. Spicing:
    ---------------
    Add turmeric powder, red chili powder, and salt.
    Mix everything well to coat the vegetables with the spices.
    5. Simmerin:
    -------------------
    Add a little water to the pan to prevent the vegetables from sticking to the bottom.
    Cover the pan and let the vegetables cook on medium-low heat for about 15-20 minutes, or until all the vegetables are tender.
    Stir occasionally and add more water if needed to ensure the vegetables cook evenly.
    6. Finishing:
    -----------------
    Once the vegetables are cooked and the curry has reached the desired consistency, turn off the heat.
    Adjust the seasoning if needed.
    7. Serving:
    ---------------
    Serve hot with steamed rice or roti.
