You have reached the next level, Roel. Simple and perfectly effective. Never saw this before. Why didn’t i think of this myself? It is the best meat for this. I need to go te Munich in 2 months.. o no.. i can do better in my backyard!

3:10 Schweinshaxen means literally ham hogs, so you are fine using the German term for it. The other name "Eisbein" means ice-bone as the bone in it was used in the olden days for ice skating

Carolina Gold is a genius idea to pull in that classic German mustard taste.

Weer een heerlijk recept Roel. Zou je een keer naar Smoke BBQ Dusseldorf of Pendergast A'dam willen gaan en hun menu kunnen namaken?

Do slice up the crispy skin and add it to the pulled meat for extra texture and flavor.

schweinshaxe is not an eisbein... same part of meat, but different prep... eisbein is salted and boiled/cooked vs schweinshaxe, which is roasted or rotisserie grilled...

After all day drinking at October Fest. They let us stay as long as we kept drinking all though our wrist band was only good for an hour. This was the best f’ing sandwich I ever had.

    Recipe looks good but man.
The crispy skin is by far the best part and it is not included :(
Haxe, Spanferkel, Krustenbraten ..... I basically dont care about the meat just give me that crispy skin :D

I think a better name might be pork hock, as a ham hock is salted.

And you need to smoke meat the true with fire and wood or lump charcoal cause that's a lazy man's way of what they call smoking meat but it's not

My Houston Nephew thinks that this was originally NOT a German preparation/recipe, but an ancient Mesopotamian concept, and that you must have poached it from an Egyptian hieroglyphic!
I have advised him to consult a psychiatrist…before he tries the recipe……..
