    I'm a trained chef. Everything in this video is legit. The cooking technique is called Braising. And cast iron is amazing and has additional health benefits such as micro dosing iron into the food. Love the channel!

    I can't live without my cast iron! I have skilletts from 4 inch to 18 inch. Some of them are close to 100 years old. Passed down from my Granny! I'm 65 and have used cast iron all my life!!!

      Yes the 4 inch is great for a fried egg to make a breakfast samich. I use the 18 incher to make homemade pan pizza in the oven. I also have a waffle iron, so you can make waffles over a campfire. I have a Dutch Oven to make stew, chili, and even peach cobbler when Horse camping!

      This just popped up this morning. Have never heard or seen Carnivore Quest before.
      Started carnivore 6/28/24 not caring much for meat so don't know much about how to make meats. Searching for more ways to make different meats.

    I've cooked chucks like this (same ingredients) for years EXCEPT for one MAJOR change. Instead of salting immediately before searing, 'DRY BRINE' your roast. If you're not familiar with the process it's very easy and the flavor enhancement by something this simple will blow you away. You'll need a small sheet pan or skillet with a wire rack. Evenly salt both sides and the edges of the roast (or steak), place it on the rack and put in fridge UNCOVERED for a few hours hrs (minimum) or overnight. For dry brining beef, one tsp of Morton's Kosher Salt salt per pound is what is recommended, (or 3/4 tsp of table salt per pound). At first it will get very wet as the salt draws out juices from the meat, but after a few hours it begins to look 'normal' as the juices go back in taking the salt with it. After several hours it will be dry to the touch and there will be but a few drops, if any, of juice in the pan. Pat dry any wet spots, add your pepper and sear. DO NOT SALT IT. It will not taste salty, but you will definitely notice the flavor, not to mention the tenderness and juiciness.

    My mom made her chuck roast similar to this method but she added a package of ONION SOUP MIX. She made in on a Sunday where she put in in the oven before we went to church and pulled it out three hours later ....I dream of those roasts.

    I stocked up on chuck roasts when Ingle's had them for $3.98lb. last week! This is the same way I do mine with the only exception that I add 1/2 stick of butter right on top of the roast before it goes in the oven!! Makes that au jus even richer and creamer. Thanks for sharing your recipe! Y'all are looking awesome!!

    I made your chuck roast recipe today. I used Redmonds smoked salt and it was so amazing and easy. This recipe will definitely be part of our rotation. My husband always says he can't be carnivore because he can't eat that much beef, but he ate way more beef than I did tonight.😅 Thank you for sharing this wonderful goodness!!!❤

    I'm down 24 lbs now and you both have been a huge inspiration to me. The videos showing how simple and affordable you eat has helped me a ton.       @@desertgirl1392 are you in their Facebook group? You should make a post and we all can help you brainstorm although It might be very normal also. I have heard of some people not losing in the beginning while their body adjust and heals. I started keto first for a few months and lost water weight at first then I was losing about a pound a week or staying the same so then I cut out cheese, almonds and keto creamer and was considered eating carnivore and then I started to more rapidly lose weight. I'm a 46 year old female so it's been slow going this time around compared to my younger days 😂.

      @@desertgirl1392 did you measure yourself? Just because the scale says you aren’t losing, doesn’t mean things aren’t happening. This is not a weight loss diet, it’s a get healthy diet, weight loss is just one of the benefits.

      @@generaljane7643 You will lost 5- 10 pounds or so of water weight in the first week. If someone didn't drop 5 pounds they have to be eating carbs.
      I'm 50 and I lose 2-3 pounds a week. I'm actually trying to slow down the rate I lose. I had 50 to lose and 20 more to go.

    To add another dimension to it, shred the roast, place on a baking sheet and put a tad of the au jus sprinkle on top. Broil 2-3 minutes, adds an EXCELLENT crunch to the meat 🥰🥰🤤

    Last week, I made Stifado, a Greek Stew using chuck roast. 3 min sear on each side, sauteed shallots red onion and garlic. Tomato paste, tomato sauce, and 2 cups beef broth. Thyme, bay leaf, 280° for 4 hours. I was able to pull the roast apart with 2 forks very easily. Very low carb and delicious 😋

    I went to Costco over the weekend and saw a double package of Chuck Roasts'. I said to my husband, I'm going to make Cassie's Chuck Roast!     I could never make a tender chuck roast or any other kind of roast. They all came out like seasoned leather!!! I saw your recipe and tried it in my dutch oven. It came out good but I kept practicing and watched your techniques over and over. My fiancé knew I was serious about making really tender chuck roasts so he bought me an iron skillet (it was pre-seasoned!) and that did the the trick of making the perfect, tender roast that falls apart when you're trying to transfer it to a serving platter! I want to thank you so much for helping me to FINALLY cook a perfect roast with Yukon gold roast potatoes, Yorkshire Pudding, honey buttered carrots, and buttery brussel sprouts!!!🎉🎊👍👍👍😍

    Yep & Yum~ been cooking mine this same way for decades, ever since finding my first 100 yr old cast iron skillet at a yard sale. It's perfection every time~as long as it's a fatty enough piece of beef.

    My mom made this when I was growing up. Down south, she would stuff it with cloves of garlic and red pepper. Always one of my favorites.

    Perfect! Braising is the way to go. I brown all sides in a cast iron pan, but transfer beef & liquid to a preheated Dutch oven for more depth . The last 45 - 60 minutes, I put in long raw carrots and quartered red potatoes.

    This looks delightful. I've been air frying my chuck and then pressure cooking it for 45 minutes in the ninja foodie. It's good, but yours was glistening and looked really delicious 😋. This motivates me to use a cast iron skillet that was passed down from my granddaddy to my mom and then me. Thank you Cassie!

    I inherited several cast iron pans of various sizes and found some at thrift stores. I also found lids for all the sizes at thrift stores. Love them. Your recipe is amazing. Have a chuck roast in the freezer and going to try. Yay!

    I watch this a while ago, then just watched your new video and Larry mentioned the chuck roast. So I just watched it again. I have a chuck roast in the freezer but I think I’ll just go get one so that I can make it fresh. This looks really good. We’re supposed to get some nice cool weather the next couple of days so I will make an exception to heat up the oven for two or three hours. It does look really yummy.     Wow 🤯 I have always eaten ground chuck roast from my grinder or sliced like rib eye but I never knew of or thought how to make a pot roast!!! This looks so simple and phenomenal 😍 I also have a cast iron so I will definitely be doing this today!! Chuck roast is called the poor man's rib eye, but this looks like the rich woman's pot roast!🤤😋❤😂

    Just ran across this and going to try it. I do know though that I will not cook on new cast iron. I have old 50 and 60-year-old cast iron maybe even older. The new ones that say made in Taiwan or wherever even USA just don't have a good taste to them. Anyway use the old Griswold or Wagner cast iron and you'll be amazed at the difference in taste

    Best to make sure the water is hot before you add it. Even letting the skillet sit for a couple of minutes, it's still really hot. A fast temperature change could crack the cast iron.

    Wow. I'm doing my second roast this way, right now. First one was delish and I am REALLY looking forward to this one.     Hi Cassie. Looks delicious! My Italian mom was an excellent cook. She used to make chuck steak pizzaiola. It was slow cooked very similar to yours, but in a tomato base. Will definitely make your version when the temps drop. My mouth is watering!😋

      @@CarnivoreQuest It was soooo good. You basically do the same to start. Brown the beef on all sides. Then add the tomatoes, a little bit of water and some garlic and basil. Then slowly cook covered. When the meat is fork tender, throw in a can of peas. Let the peas simmer for a few minutes & serve. Mom cooked hers in this huge stainless steel skillet on top of a gas stove.

    I was such a goofball when I made this delicious dish. I forgot to cover the pan in the oven, so of course most of water disappeared.       OMG Cassie, SO good! I do have to admit making a couple tweaks because we do ketovore - so I added maybe 1/3 of a small onion, cut in chunks, and 3 cloves of garlic, a couple twigs of rosemary from my garden. Did everything else the way you did. 2 hours 45 minutes later, we were gnashing our teeth to get into it, but let it cool a few minutes and it just pulled right apart. AMAZING to get that much flavor out of a pot roast. I told DH we'll be doing that weekly during the winter at least! Thank you again. What a winner that one is!

    I have been studying with a French chef. I appreciate your trying to teach us. Here’s the thing though water is the enemy of flavor. Ask Chef John Pierre so by the time you are ready to pour water in just know that you should be pouring in beef broth and what are the ingredients I happen to be making beef broth, bone broth with beef over the stove right now and not one but 222 quart containers with lids. Here is what you need. You need mirror and mirror is the word for three following ingredients, onions, celery, and carrots then you need the beef and you need beef bones and then you need threeleaves and you need a healthy serving of thyme wrapped in bakers twinez leaves and you need a healthy serving of time wrapped in Baker twine. Go for 10 to 12 hours then strain everything through a strainer and get rid of all the ingredients. Oh by the way, I forgot to tell you when you’re making beef bone broth do you have one extra ingredient then when you are making chicken stock or chicken broth and it is One can of tomato paste those little tiny cans yes that’s what Chef Jeanpierre taught me. Then when you have exhausted your time it’s time to pour all of that stuff through a strainer into a bowl that captures all that liquid goodness and this chef was right when he told me do not bother to eat the meat do not bother to eat the onions do not bother to eat the carrots or the celery because the flavor is in the water where you wanted to be well I did not listen, and I tried to carrot it was the worst carrot I have ever tasted. It tasted like cardboard, but I blessed the carrots the onions, the celery, the beef everything because it gave up all of its beauty it gave up all of its flavor then I poured it through a strainer and I discarded it into the garbage and what was left over is pure liquid gold that you can use to make soups because you did not put Salt into it. That way you can control the salt that you use for soups or other dishes. trust me this is the way to go keep in mind all the previous ingredients that I gave you to make chicken stock are the same. The only thing that’s different about beef stock is one tiny can of tomato paste. God bless you and thank you.

    I did it almost exactly the same. My roast was a 2.45 lb. roast. I used coarse Kosher salt and Omaha Steaks seasoning. And I used 2 cups of beef bone broth and 1 cup of water for the liquid. I didn't have a pizza pan so I used my neighbor's cast iron lid. I cooked it in the oven for 2 1/2 hours. So I'd say the cooking time works out to be about one hour per pound. It came out very tender !!!

    The recipe is outstanding, 100% delicious. Since I’m not on the diet, I did exactly what you posted plus added some potatoes and everything came out amazing. I did four hours at 350°. I use the iron skillet and used tinfoil on top. Five stars it’s fantastic.

    Braising tougher cut it a terrific way to cook. Your Chuck looked great. You both look great. I love ox tail and beef shanks braised. I braise on the pellet grill in summer to avoid heating our house.

    I came across your video when I was searching for ways to cook a chuck roast in the oven. I tried this yesterday and it came out amazing. Mine was only 2.5 pounds so after searing it I reduced the oven time to an hour and a half. It was cooked perfectly. Not quite fork tender but wasn’t tough either. Thanks for sharing your recipe ❤

    Definitely going to make this, thank you. I use my cast iron a lot and I like a silicone handle cover that Amazon sells. It is sold by Lodge and fits over extended handle, also have one for handle on opposite side. I leave it on entire time while stove top cooking and remove when pan goes into oven🌞

    Love the note on your fridge, “Are you really hungry?” I'm a new Carnivore, I don't feel as hungry as I once did. Sometimes I forget that I did not eat. I've incorporated intermittent fasting into my journey, and have so much energy. I walk each day and I feel great. I've lost a lot of weight. In the beginning, it did not show. Two and a half months Carnivore, fasting and doing Omad and NOTHING!!!!! I was feeling so sad, but each morning I got up and went walking and ate only meat. And, then--I'm melting away and I'm loving it.

    We must have gotten our cookware at the same place. My lid serves two functions also……pizza pan and lid for cast iron pan, or whichever pan I may need a lid for. BTW….your roast looks yummy.

    In Brazil, salt is pretty much the only thing we add to beef.
    At least that's what we used to do when I was living there.
    Now I see most of people adding black pepper and garlic salt to beef, but I rather keep the old style.
    IMO using salt only gives the meat a more realistic taste.
    Again, just my opinion...

    What the baking soda does. is open up the pours in them meat. when you risen if off in warm water OPEN ALL THE WAY UP. Waiting to soak in the flavors When you put it on the fire the pour will close keeping the meat tender and juice. When it done let it rest about 30 min then the pour will open back up releasing some juices 👉👉IT will be the most tender, juicy, and delicious roast, you ever at

      It is better with veggies flavoring meat n juices (onions! garlic!) but just meat w/S&P is good too

    I’ve made this many times. Always tastes great. It’s one of my go to Chuck recipe now. Couple of times water dried out ( cover was not tight enough) so make sure it’s tight enough. Thanks for the recipe! 😋

    For my small household, I used an under-a-pound hunk of chuck in an 8-in skillet. Adding one cup of water made for delicious meat but only gave me a few tablespoons of the succulent juice. My advice is to NOT scale down the water at the same ratio as the meat. Next time I'll try my 1-pounder in a 10-in skillet and fill slightly more than halfway up the sides of the roast. The au jus adds a lot. Simple recipes like this should go in everyone's repertoire. Many thanks!

    I have been carnivore, meat, eggs, cheese, butter and salt for 5 weeks. That looks so good. We take chuck roast put it in the sous vide for 16 hours and it like eating ribeye. If you haven’t tried sous vide it’s a must in my mind for carnivore for a lifetime. Try some beef gelatin in that gravy can thicken it up like a Demi-glacé. Looks really good.

      I won't sous vide. There's no way I want my meat cooked in plastic "BPA FREE" or not. No thank you. I'm sure its tender

      @@CarnivoreQuest glad our ancestors didn’t reject the idea of taking our meat off a stick and putting it in nasty old cast iron. Everyone assumed you would die from iron poisoning. Sous vide is a convenient way to take pieces of meat like chuck roast, top round, brisket and any other less expensive cuts of meat, turning them into the most tender cuts of meat. Especially when eating carnivore on a budget. But hey, you do you. I enjoy my meat medium rare and tender, there is no other way to eat a chuck roast medium rare and be as tender as a porterhouse. If you know of one please share.
