When I started adding the refrigerant, I noticed that on the gauge it would go to the green zone and than back down to low. It keeps doing that every time I squeeze the trigger on the refrigerant. Could this be indicative of a leak in the system?

Sounds like your HIGH PRESSURE LINE/HOSE is failing, take a good look at it.
Is the vehicle in idle while you fill it?
Yes you want the truck running and the ac on full blast and to its coldest setting.
