DDM is an update to the MDM stack (for Apple devices) that allows the device to apply settings and report on settings status, direct to Intune. It means that the device an send the status back to Intune immediately, without waiting for the normal polling cycle. This is possible because the device will only send details specific to the change that happened, meaning it's a much smaller and specific update.
