The knife with the holes is for cold butter, the idea is that the thin strands are easier to spread or warms up quicker with the increased surface area.

I have to try to find those puzzle cutleries and give them to my guests at luch time. BTW here in Finland some gasoline station cafes and other cafeterias have coffee metal spoons with a hole in the middle to prevent heating dope.
Are you sure that's actually what it's for? there's a lot of myths about "this is to prevent people using drugs" in public places but the vast majority of them aren't true and have a much simpler more pragmatic use. A cafe wouldn't bother buying specialty spoons for that, they'd just lock the bathrooms - I doubt they have that big of a drug problem and weird spoons won't fix it if they do. I'm sure people can carry their own spoons. Just doesn't make much sense.

Could be a bimetallic strip, where there's two metals with different thermal expansions stacked onto each other. Strips like that are often used as thermometers in various devices.

A material is 'trained' to 'remember' a shape. When it is cold, it can be deformed into a new shape. But when it is then heated, it will return to the 'remembered' shape. You can type 'nitinol' or 'shape memory' into the search bar to find a number of video demonstrations. 😃
