Tom, you never start off with the garlic! Garlic burns super fast and becomes bitter tasting. Always add garlic after the rest of the ingredients are cooked half way.

Not as far as I've seen. Usually garlic is added either with the onions or a little afterward.
Every recipe I have ever followed has the garlic added right at the beginning?
Garlic can scorch easily; sweat the onions first, turn the heat down a little, and then add garlic. It will then caramelize with the onions and not burn. I could see the scorched garlic in his pan. Definitely would be bitter.
Don’t put it on high heat then I’ve seen many chefs add in garlic first lol

lol i knew as soon as i saw that V2 mince that was the dish ryan was dissing in the intro.
That was not quite spaghetti bolegnese but I died laughing at Ryan's comment. I think it could be improved by adding some tomato paste, some herbs, plant based beef stock, cracked black pepper. The V2 mince is good but not seasoned so you gotta amp it up a bit.
I'm absolutely stealing Ryan's recipe and making it for my work lunch!

I have the same question. But adding raw curry leaves and boiling the rice is how Sri Lankans make the yellow rice? Because I have never seen curry leaves put like that and boiled. Usually here we temper it in oil and then add the rice
