I love how creative yet simple these meals are (the lunches and dinners) I swear I can’t ever come up with anything that isn’t just rice chicken and broccoli! This really helps me up my game in the kitchen and my husband has been loving the new variety in our meal plans lately ❤️ he’s not a picky guy and eats whatever you put in front of him but he’s complimented me numerous times since switching things up ❤️
That hash brown casserole is called Funeral potatoes here is Utah. It’s a delicacy around these parts lol. We typically top it with corn flakes mixed in melted butter before baking so it creates a yummy crunchy topping.

I have a recommendation for keeping apples from browning… white grape juice! It doesn’t add a sour taste like lemons, but has enough acid to do the trick! Thanks for all the videos.. I truly enjoy them and have used many of your recipes!
I love the meatloaf chili idea! There are only two people at my house so when I make meatloaf we always end up with leftovers and usually eat sandwiches..the chili will be a good change!

I have the the same apple slicer but prefer to use a knife. I used to make snacks for a preschool. I found that if you rinse the apple slices and then soak for a couple of minutes in a lemon lime soda (7 up, Sprite etc) it greatly cuts down on the browning process. This is a great use for soda that has gone flat and undrinkable. I have even used diet drinks before. The type of apple can make a difference too. Gala holds up well. I tried different types of apples, even Honey Crisp. The kids would ask me to go back to the old apples (Gala), said they liked them better.

I've done the pea salad with the canned peas too. I've found I have really good results if I not only drain but rinse the peas as well. Mine always gets less watery that way. Thanks for sharing!
OMGosh - I also grew up eating that hashbrown casserole in KY! I remember having it topped with corn flakes sometimes, too. It's so good! I now serve it along with our Easter ham.
I grew up with “cheesy potatoes” which is what you made. But with diced potatoes, sautéed onions added in, and topped with corn flakes that were mixed in butter so they don’t burn. Some people call them funeral potatoes. Super delicious and the corn flakes give it a nice crunch! I put it in for about 40 minutes at 375, check it, then put tin foil on so it doesn’t burn and put it back in for another 5-10 minutes. Taste amazing. I love watching your videos. You give me new ideas on what to pack for lunches and for dinner!!
I love mustard or strawberry jelly on my sausage biscuits. Also hashbrown casserole is hands down amazing. I love your videos can't wait to make some of these for my family.

Kristen you can just dip your apples in a bit of sprite or 7up and that will prevent them from browning also! I had a grocery store produce manager tell me that’s what they use(a generic version) years ago and what I’ve used since if I have one around! It adds a tiny bit of sweetness but not really much of a difference!
Best best way to keep apples from turning brown and NOT ending up too tart is to toss them with a very small amount of crystal light lemonade powder or a similar lemonade powder. The citric acid will keep them from turning brown, the sugar substitute keeps things from being too sour or sugar sticky. I know where some folks will use 7Up but basically it's the same thing, while adding extra sugars to the lovely fruit. This is also a way to stretch the life of fresh berries!

Ive turned leftover taco meat into chili (meatloaf never lasts long enough) it is a super simple fast meal and so much easier with the hamburger already in small pieces

With my HB casserole, I always put crushed up frosted flakes on top instead of regular corn flakes. It's always a huge hit at family parties.

Love your ideas for lunches. When I need sliced apples, I soak the slices in pineapple juice, they always taste good and do not turn brown.
I always add some ranch seasoning in my hashbrown casserole and crushed ritz crackers on top. So good!

For the apples turning brown you can use Apple juice as well just soak the apples in apple juice for a couple mins or store in fridge overnight

What lol peanut butter and jelly with Chili would have never thought
I grew up with pea and cheese salad. I've never had it with canned peas. Frozen or fresh/blanched peas is my definite favorite.
Freeze a bit of apple juice and rub the cube over the apples or add a splash of apple juice to slices, works every time

Yeah the peas they do here in the pacific too. But I’m not a fan of heavy mayo and sweet peas. I prefer it plain sweet peas.
