The custom of preparing Ceviche began in pre-Incan times with the Mochica culture who prepared a dish based on fresh fish marinated in the juice of a citrus fruit called "tumbo" and herbs from the area. Peruvian and Ecuadorian ceviche are totally different when it comes to their preparation, ingredients and flavor. In Ecuador it is eaten with chifle in the coastal region and with popcorn in the mountain region. The same applies to encebollado, which is one of the most emblematic dishes of the country. 2. Seco de pollo comes from the Santa Elena Peninsula in Ecuador, where at the beginning of the 20th century an English camp was doing oil work in Ancón. When referring to the second course of the meal, in English “second”, Ecuadorians repeated the word, deforming it until they got to the current “seco”; its preparation is usually diverse even in Ecuadorian territory. 3. As a cook who has travelled through all the country, a food aficionado and a lover of multiculturality, I want to comment some facts on this video: 1. It will always be a pleasure to all ecuadorians to see Ecuador mentioned in a good way anywhere. Our country is so small and often ignored in the south american scene as we are surrounded by bigger countries. 2. The ecuadorian hostess was very kind and precise, despite the fact the spiritual-ritual-chocolate-thing is something unheard and unknown to most of ecuadorians. Don't know where that came from. 3. Ceviche is eaten in all the Pacific coast, from California to the south of Chile and even in the Philippines. Ecuadorian version is great, and the most famous version nowadays is the Jipijapa version, which is unique because of its peanut sauce touch. That would have been a way better choice. 4. Many people are asking for other dishes to be shown in a Part 2 and I agree. There's many tasty ecuadorian dishes, but please, guys. Do a better selection of the cooks providing ecuadorian food. That sango looked absolutely nasty and bad performed. We could offer all the best ecuadorian dishes, but if bad performed like that sango, it will only leave a bad impression of our amazing cuisine. Seco de pollo (Santa Elena version, the most famous one) also comes with yellow rice, not white rice. 5. Ecuador is small but so multidiverse. Some dishes have got their own way, even from family to family. Many people are disgusted by the ceviche eaten with pop corn, specially Guayaquil people. I can understand any guayaquileño will always cringe about pop corn with encebollado, and I do too. But me, myself, I have seen Manabí descendants and Manabí families in Guayaquil having ceviche with pop corn. Yes, in Guayaquil. No, I am not lying. Learn to accept differences, guys. Most of these people hating are for sure in Ecuador, because when you're out of Ecuador, you learn to appreciate and tolerate our regional differences, which make us richer, and what unites us is more than what separates us.
My girl is Ecua, deff top tier Latino food I'd put it in top 3 for sure. Crazy not to see Encebollado con aji on here. When i went to Guayaquil I would've had Encebollado de Balde from la 18 y Gomez Rendon everyday for breakfast if they didn't stop me... Everytime someone comes from there we make sure to ask for Encebolado. There was no bad food in general while I was there tho. Honorable mentions are Bolon, Guatita, Llapingacho, Fritada... I could keep going but ill stop.

@@D1k_Richardson I am a cook 😀 Sango (de verde) and Cazuela contain the same base. Finely shredded plantain mixed with peanut paste, seasoned with a refrito containing achiote, onions, bell peppers, garlic, maybe tomato and cilantro. If you feel the difference in the consistency, it's because Cazuela is grilled over a clay pot (cazuela), letting some liquid to evaporate in the meantime is being grilled, But the stew is the same. Both are good ecuadorian stews. That sango one from the video looks yucky. Hopefully for next video they find better cooks. They can offer them a thousand bolones de verde, but if bad performed at the kitchen it will only leave a bad impression of our exquisite cuisine.

If you want recipes there is a girl called laylita that has a blog where she posts Ecuadorian recipes, she is for the most part accurate, I usually use her recipes as a template and adjust it to my preferences but overall accurate.

Came here to see if anyone said this! Proud of the distinction because it’s what sets the cuisine apart (in a good way)- as someone from Cuenca I appreciate Guayaquils take and I know it’s appreciated when they visit us too ❤
I know many Manabí people and Manabí descendants living in Guayaquil who DO eat pop corn with their ceviche. And they are Ecuadorians too. Guayas is not the centre of the universe, get over it. And I am guayaco myself, one that is not arrogant and who respects other ways of life from other fellow nationals.
Actually an average Serrano will eat it with rice too when the ceviche is the main dish (el Segundo del almuerzo). When you eat it as a side dish/snack it is normally served with popcorn/chifles, etc. That fills you up less than rice. The "marisquerías" will normally serve ceviche with popcorn as that way the client eats it more as an appetizer and will command yet another thing for the main dish (or an extra rice portion), which means they make more profit.
I'm from Guayaquil and we eat it with popcorn, chifle and/or maiz tostado. Yes, pancito too but the others are more common. I've seen eaten it like this here, in Santa Elena and in Manabí!

Growing up in Ecuador we were blessed with such a diverse cuisine, that of course as a child we did not appreciate. Now as an adult living in the USA i missed so many of those dishes. Granted I do make a few of them but there is just something about the food made in your own country. Fun fact: Ecuador is one of the countries with the most variety of soups. Que viva el Ecuador Carajo!!
Seeing other Latinos enjoying our dishes was so wholesome but you left out some of our signature dishes, ENCEBOLLADO,GUATITA, LA FRITADA, EL CALDO DE BOLA 😋😋 and we have plenty more lol but awesome video guys 👏🏻👏🏻👏🏻.
Ecuadorian here, let me explain why it's called seco de pollo if it's wet. So it's very common in Ecuador to eat almuerzos (which is lunch) but our almuerzos aren't just a sandwich and a drink, nooooooo. Our almuerzos are soup then a second dish rice with meat and salad or any number of "dry" dishes. Back in the day when the gringos came here and started drilling for oil in the Amazon region they would go have almuerzos for lunch. Once they finished their soup or maybe even skipped the soup altogether they would tell the server they wanted the second (osea El Segundo, referring to the second dish), so the word second went around and was misinterpreted and eventually the word seco stuck. Now it makes sense with the meaning being dry as well because the second dish is the dry dish, the soup is obviously not dry so the second is still dry in comparison. Edited with a correction. As an Ecuadorian, I should say that the popcorn in the ceviche or any seafood dish is a bit of a fight between the coast and the highlands of the country. You will never see someone from the coast eat it with popcorn, instead it would be rice. That battle has ended friendships and families at this point!!!! Just kidding. But seriously, there is beef with the popcorn in seafood dishes. Please, do a second part with encebollado! That's our trademark!!! And also bolones, hornado, so many other dishes, and of course un canelazo!

If you feel the difference in the consistency, it's because Cazuela is grilled over a clay pot (cazuela), letting some liquid to evaporate in the meantime is being grilled, But the stew is the same. Both are good ecuadorian stews. That sango one from the video looks yucky. Hopefully for next video they find better cooks. They can offer them a thousand bolones de verde, but if bad performed at the kitchen it will only leave a bad impression of our exquisite cuisine.

If you want recipes there is a girl called laylita that has a blog where she posts Ecuadorian recipes, she is for the most part accurate, I usually use her recipes as a template and adjust it to my preferences but overall accurate.

In “La sierra” Los serranos eat ceviche with popcorn. In the coast, costeños don’t eat with it only with chifles and bread occasionally.
Came here to see if anyone said this! Proud of the distinction because it’s what sets the cuisine apart (in a good way)- as someone from Cuenca I appreciate Guayaquils take and I know it’s appreciated when they visit us too ❤
I know many Manabí people and Manabí descendants living in Guayaquil who DO eat pop corn with their ceviche. And they are Ecuadorians too. Guayas is not the centre of the universe, get over it. And I am guayaco myself, one that is not arrogant and who respects other ways of life from other fellow nationals.
Actually an average Serrano will eat it with rice too when the ceviche is the main dish (el Segundo del almuerzo).
When you eat it as a side dish/snack it is normally served with popcorn/chifles, etc. That fills you up less than rice.
The "marisquerías" will normally serve ceviche with popcorn as that way the client eats it more as an appetizer and will command yet another thing for the main dish (or an extra rice portion), which means they make more profit.
I'm from Guayaquil and we eat it with popcorn, chifle and/or maiz tostado. Yes, pancito too but the others are more common. I've seen eaten it like this here, in Santa Elena and in Manabí!

Growing up in Ecuador we were blessed with such a diverse cuisine, that of course as a child we did not appreciate. Now as an adult living in the USA i missed so many of those dishes. Granted I do make a few of them but there is just something about the food made in your own country. Fun fact: Ecuador is one of the countries with the most variety of soups. Ecuadorian here, let me explain why it's called seco de pollo if it's wet. So it's very common in Ecuador to eat almuerzos (which is lunch) but our almuerzos aren't just a sandwich and a drink, nooooooo. Our almuerzos are soup then a second dish rice with meat and salad or any number of "dry" dishes. Back in the day when the gringos came here and started drilling for oil in the Amazon region they would go have almuerzos for lunch. Once they finished their soup or maybe even skipped the soup altogether they would tell the server they wanted the second (osea El Segundo, referring to the second dish), so the word second went around and was misinterpreted and eventually the word seco stuck. Now it makes sense with the meaning being dry as well because the second dish is the dry dish, the soup is obviously not dry so the second is still dry in comparison.

As an Ecuadorian, I should say that the popcorn in the ceviche or any seafood dish is a bit of a fight between the coast and the highlands of the country. You will never see someone from the coast eat it with popcorn, instead it would be rice. That battle has ended friendships and families at this point!!!!
Just kidding. But seriously, there is beef with the popcorn in seafood dishes. Please, do a second part with encebollado! That's our trademark!!! And also bolones, hornado, so many other dishes, and of course un canelazo!
