Kuytiev Phnom Penh Cambodian Rice Noodle Soup

  • Broth: 12 servings
    Large pot - 2/3 full of water and boil on high heat, add ingredients and simmer for 30-35 minutes
    3lbs of pork neck bone
    2 dried squid
    2 yellow onions
    2 garlic head
    4 preserved sweet radishes
    1/2 cup of dried shrimp
    2 tbsp of salt
    1 cup of sugar or brown sugar
    4 tbsp of fish sauce
    4 tbsp chicken bouillon
    Toppings:
    Ground pork
    Shrimp
    Pork meatballs
    Tripe
    Liver
    Heart
    Garnishes:
    Cilantro
    Green onions
    Jalapeño
    Yellow onions
    Beansprouts
    Thai basils
    All items can be found at your local Asian grocery store.

    what can we substitute the dried squid with that’s not seafood?

      You can actually just leave it out. My husband is not a fan of the umai flavor. Traditionally it is used in Cambodian kuytiev/noodles.

    Is the dry squid found at the asian store?

      Yes I’ve seen them at Ranch 99 and various Asian stores. Mines are from Cambodia.
