When I asked where to eat in Saigon, one of the suggestions I got was a restaurant called Bánh Tằm Bì Đồng Tháp (Thank you Yuyu Yuyu). So after taking a day trip to walk around and explore Cho Lon, Saigon’s Chinatown, we weren’t too far away from the restaurant and decided to stop by for a mid afternoon meal.

When I first entered the restaurant, I literally had no clue was bánh tằm bì, all I really knew was that it was a Vietnamese noodles dish - that’s all. But to me that’s part of the joy of traveling and eating, what I love to do so much - discovering and trying foods that you’re never tried before. As it turns out, banh tam bi is a dish of thick tapioca noodles, which almost look like Japanese udon noodles to me, dressed with herbs and thin strands of pork, then doused in a thick sweet coconut cream sauce.
So anyway, we entered Bánh Tằm Bì Đồng Tháp, and I ordered just a normal bowl of their bánh tằm bì. She first added a handful of herbs to the bottom of the plate, a combination of mostly Vietnamese coriander, and also some thinly sliced cucumbers. Then came a handful of the thick tapioca noodles, followed by a couple of different types of pork, both pork meat, and pork skin. Finally for the seasonings and dressing, she added a ladle of thick coconut cream gravy to the top, and then added a scoop of Vietnamese pickled and finally a topping of green onions.
I was pretty excited to dig into my plate of bánh tằm bì, which looked beautiful. There was a type of sweet fish sauce which came on the side, and also there was a bowl of crushed red chili, which I can’t live without. But before garnishing it, I decided to try it on its own. The first flavor that stood out to me was the strong coconut flavor - if you love coconut, you’re going to love bánh tằm bì. It was rich and creamy, and the noodles were extremely soft and slippery. Along with the fresh coconut, what I liked most about the dish was the fresh Vietnamese coriander and crisp cucumbers. However, the sauce was a little on the sweet side for me, so it wasn’t my favorite dish, but I still enjoyed it, and it was great to try for the first time.
You’ll find bánh tằm bì all over Saigon, at small restaurant and at street food stalls, but here are the details for the restaurant we ate at. Thank you again for the recommendation!

I grew up in Dong Thap and as a child, would wake up at 6AM every morning to eat a bowl of Banh Tam Bi at the market before walking to school. This video brings back many happy childhood memories in Vietnam. Thanks for sharing Mark!

I've never heard of this dish as a vietnamese person. So awesome to learn about it because now I want to try it!! can't believe this was 4 years ago!
My ultimate favourite dish! It is rice noodles, if you see something looks translucent, it is tapioca, if it is milky white it's made from rice. And the coconut milk sauce is made from coconut milk thickened with a bit of flour, heated, if you want to keep the sauce longer. If you want to go very fresh, use plain coconut cream, but this goes off quickly.
Vegetarian bánh tằm bì uses stir fried sweet potato/vermicelli strands in place of the shredded pork
The noodles are composed of both tapioca and rice flour. It doesn't make sense at all to some people because of that sweet side on a main-course dish, even to me when I first got to know about it (I was born and raised in Saigon but moved to the U.S 2 years ago btw). The reason why this dish has a sweet taste (from the coconut milk) added to it is because it originated from Western Vietnam, where people love cooking everything a little bit sweet, even entrée!
It sounds like Asians eat a lot of gluten free foods. I will tell my friend about visiting Vietnam Nam for just the food.

This dish I loved when I lived in vn way back...you need a bit salty fish sauce to balance out the sweet coconut sauce, and spicy chilly is good off course.

Karen Le It's conditioning. For example, koreans eat kimchi with almost all their meal but it's actually very spicy to most in the west. But koreans could eat a gallon of it and still not be spicy. But they are not the spiciest eaters in the world.
All the chilies are not the same, most of these that come as condiments are not hot,

mmm omg looks so good, my mom also makes a dish with the coconut sauce, but the best way to balance the sweetness of the coconut is to add more of the fish sauce! Probably the best mix is equal parts of each but I prefer more coconut because it gives it a more creamy texture! :)

you have to put in some fish sauce in order to balance the sweet and creaminess of coconut sauce.

'Nother great video, Mark. Quick question, we all know how much you love food but is there anything in the world that you dislike? I really can't imagine you not enjoying something, even nasty bits like tendon, intestines or tripe would be a surprise (to me at least) if you mentioned that you don't enjoy eating them.

chris bodrum the rolls in the videos are summer rolls, which are supposed to be fresh. Spring rolls are the deep fried one. They are different :)

Western people in Montreal can eat spicy. Not as much as Mark of course because even I can't eat that spicy, but people here can eat more spicy than the average American I think.

I lived in America, I used to say herbs with the h but then I heard others pronounce it without the h so I just say "erbs". It's not an accent, it's just how we say honest without pronouncing the 'h'
