    Ube Custard Cake
    Ingredients:
    Caramel:
    Granulated sugar 121g (1/2 cup)
    Water 61g (1/4 cup)
    Custard:
    Whole Eggs 2 each
    Egg yolks 8 each
    Condensed milk 397g 1 can (14 oz.)
    Evaporated milk 500g (2 cups)
    Vanilla 18g (2 Tblspn)
    Lemon juice 1/2 of 1 lemon or kalamansi juice 2 Tblspn
    Salt 1g or a pinch
    Frosting:
    Egg white 122g (4 eggs)
    Sugar 227g (1 cup)
    Butter 226g (1 cup) room temp.
    Vanilla extract 1 Tblspn
    Sponge Cake:
    Eggs whites 8
    Egg yolks 8
    Sugar 340g (1 1/2 cup) used half for the whites and half for the yolks
    Vanilla extract 12g (1 tblspns)
    Salt 3g (1/2 tspn)
    Cake flour 252g (1 1/2 cup)
    Ube extract 4 Tblspn
    Simple Syrup:
    Water 1 cup
    Sugar 1 cup
    Orange peel
    Lemon peel
    Cloves 4 pcs.
    Star anise 2 each
    Cardamon seeds 4 each
    Cinnamon stick 1 each

      Purple yam. You need purple yam extract which you can find I guess in asian store. Not sure in your country

    Hello 👋🏻 How long do you mix the egg whites with sugar in the process of making sponge cake? Because I always fail that step. And can I use real ube or ube powder in making sponge cake? if so, how many grams should I use?

      Khine Yee Mon Su I don’t really know exactly how long next time I’ll try and remember to write it down for you. I usually know when my whites and sugar are really by just looking at🧐 it needs to be glossy and medium to stiff peak stage. You can use either one and I would only only add 2-3 Tblspn of Ube powder because. If you use Ube make sure you add enough into the yolks mixtures start by 1/4 cup and go on from there.

    How long do you steam the custard?

      Theresa Sweetstop I think mine was 30-40 minutes depending on your steamer. Just check if your custard is set that’s how usually Cook mine.

      Sharrea Dumapias pwd naman Wala ng dimple syrup or pwd mo parin gawin sugar at water Lang. Pakuluan mo Lang ng low heat for 10 minutes pwd na yun.

      Maria Aisha Suarez Pag handheld mixer ang gamit mo it takes time talaga. Kaya antayin mo Lang hanggang soft peak before mo add yung sigar Tapos slowly Lang. Then mix mo hanggang stable na yung meringue mo. Pag liquid parin siya ibig sabihin kailangan mo parin siya I whisk. Good luck 😘

      Hanje T Yes cut the recipe in half. You can still have two layer of cake just cut the cake in half and use the crumbs for coating.
