You could try different root vegetables to scale a fish to add different flavors. Perhaps something stronger like ginger could significantly add flavors to the fish.
For the last one with Parmesan cheese, it's probably because the oil is not hot enough: in the video, the oil boils instantly as the dehydrated cheese is fried, while when you've tried it, the oil was barely fizzling, and it's not even boiling.

Hey Sorted Team I was on Reddit and saw a megathread talking about how amazing it would be to able to pay an extra fee for the Live Shows in order to download them and keep them forever. They are so fun to watch and it would be nice to be able to revisit them in the future. Just a thought. Sending my love to the whole sorted team!
Other shows I follow that have a similar live show/on demand tickets thing put up the show on their store to pay and download it like 6 months to a year after the fact. Some have it as pay what you want, but obviously that can be whatever.
I would love that...I wish I could have seen no way out and the Christmas show they did at the theater. Plus seeing Wild Weekend during the winter when things are gray, icy, snowy and colder than a peguin's patootie... would just make me feel warm in spite of the weather.
I would love to just be able to watch them at all if I missed them the first time, and given that it's not longer live I feel it should be considerably cheaper since we'd miss out on the interactive aspect.

Sour, or "fizzy" dairy might not be a thing in the UK, but we drink sour milk called piimä in Finland, it is close relative to kefir and in general those types of drinks are popular all over. My Kenyan girlfriend said piimä reminds her of the similar drink back in her home country. Cannot remember the name of their version right now though...
I live in Idaho, and we have a local Shawarma restaurant with a yogurt drink that's similar to kefir. I loved it and none of my friends did so I got to enjoy, like, four portions in one sitting. 🤭

Ayran is one of the best things Turks ever invented. And man they have a lot of great food invented! But one thing I've learned to make it: since there are different Yogurt bacteria stems, the best Yogurt to use is the sour Turkish yogurt. It is perfect! To get the bubbly, fizzy effect I use sparkling water, which is not traditional, but works quite well. Mint, a pinch of salt and beaten until it gets a bit of foam. Drink it cold during hot days...perfection! Also, Döner Kebab and Ayran is a must!
The cheese crisp failed because the cheese was too dry. Some moisture in the cheese needs to remain when they are fried to turn into steam and puff up.

For scaling fish, my grandfather used to keep the bottle caps from the day of fishing, nail them to a piece of scrap wood from the pile kept in the boat shed, use it and toss it! Worked near perfect, re-used stuff that was waste (before recycling was a thing) and no real cleanup!

It was way less complicated; I just browned a giant meat patty, then topped the whole thing with hash browns, but it in the oven, and then for the last few minutes covered it in cheddar cheese and put it under the broiler. My dad used 2 things to descale fish. For carp he had a short plank with a beer cap nailed to it. For every other scaly fish he had short round stick with this exact angle, it worked wonders!
Doogh is pretty common with different names in that entire region. I'm from Pakistan, we do 2/3 milk and 1/3 sprite/7up to make a refreshing summer drink, the fizz and hint of lemon also makes the milk taste creamier than it is. Kefir is fermented, regular yogurt isn't, so they aren't synonymous in my opinion.
The cheeseburger pie reminds me of a weird creation that the chain restaurant Boston Pizza here in Canada used to have on their menu. They offered what they called a pizza burger. It was basically a cheeseburger topped with pepperoni & mozzarella wrapped in pizza dough like a panzerotti.
The German brand Dr. Ötker used to sell the Pizza Burger as a frozen product in supermarkets. Unfortunately they discontinued it (probably bcs of low demand) but it was amazing and now there is a small cult on social media hoping for them to bring it back. When it comes to burgers I'm with George Motz. "Burgers don't need to be extreme or extravagant. It's a burger." Smash burgers apply to this as well. Why do people feel the need to add two patties to something that's supposed to be a quick meal on the go and back to work. If I eat a double smash burger I feel like there goes the rest of my day...I'm gonna nap and nothing will be accomplished. Now people want to add it to a pie!? No...too much and Jesus wept that's a ton of carbs.
I think the water absorbed and trapped in the cheese acts as leavening when heated similar to the water content of cold butter in pie crust and other crisps to make them lighter and crispier.

I've been making those burger pies as sliders for 30 years now. They are always the quickest apps to be eaten at every party. I've also used meatballs, omelletes, sausages and chicken burgers as stuffings.

Quick tip! Scrunch the parchment paper first, then spread it out; this keeps it from rolling up when you lay it out on a pan sheet. Bonus: if you need parchment to go up the sides of cake pan; brush a bit of oil on sides of pan. The parchment paper will stick to sides easily
I am from Bulgaria. In the Balkans and Turkey you have the drink Ayryan which is Yoghurt Still Water and Salt. When it is really hot you sweat a lot and lose electrolytes. The cold liquidy milk and the salt just hit the spot in the heat. Sometimes I prefer such a drink to water alone. I will be trying the sparkling water and mint version - sounds delicious!

South African, here... I didn't know the cheeseburger pie is kinda our exclusive thing. They're easy to find wherever pies are sold, but as a more expensive 'premium' option over the usual variety. They make great hangover cures :D

I have been making burger pies like that for years. Also when I make my burgers from scratch, I use beef mince or lamb mince,finely chopped onion and garlic, with chopped gherkins and Dijon in the burger, with grated cheese in the mix, and serve with fried onions and ketchup and mayonnaise and either in the pastry or in pitta bread. The lamb ones get parsley and fresh mint in too.
Hi guys! Dried mint is traditional and you can put a sprig of mint on top to serve. Definitely add salt too...some people garnish with a dried rose bud to make it pretty. It's nice to use a sour strained yogurt for that zing! Such a good drink alongside a good Persian kebab and rice dish! ❤❤
Wow it was fun watching you drinking doogh. We mostly use dried mint. And not many of our doogh is with soda or carbonated water. We usually make it with normal water. And the premium version of it would be much more of it in a bowl with ice shreded cucumber dried mint optionally rose petals and crushed bread. I'm glad you liked it😊
I'd imagine that carrot trick could be handy when you're out camping, too? Especially if there's young kids along, and you want them to help with food prep but don't trust them with sharp knives yet.
The Burger Pies we have here in South Africa normally have a cooked tomato relish inside the pastry, which will give you that tang you are looking for. Always a favourite and normally are sold out quick.

Back at home we have a drink called "Gespritzte Buttermilch". Which is a special dairy drink with soda water mostly drunk when you go hicking in the mountains. You can add different flavors such as elderberry or cranberry. Refreashing and delicious. Merry Christmas from Austria🇦🇹🎄

I literally just try the carrots trick, it absolutely work! Home cook you guys absolutely have to do this! The thing is its slow (maybe because im not used to it) i work at restaurants that have fresh fish on the menu and we have place to scale the fish so this method isn't gonna work just because how fast we scale fish, but for home cook where you don't have the capability to wash every corner of your station its worth doing also just roast the carrot or stir fry it job done

@ I use it instead of buttermilk when doing pancakes. The fizziness reacts with baking powder and pancakes become super fluffy

I'm from Pakistan, we do 2/3 milk and 1/3 sprite/7up to make a refreshing summer drink, the fizz and hint of lemon also makes the milk taste creamier than it is. Kefir is fermented, regular yogurt isn't, so they aren't synonymous in my opinion.
The cheeseburger pie reminds me of a weird creation that the chain restaurant Boston Pizza here in Canada used to have on their menu. They offered what they called a pizza burger. It was basically a cheeseburger topped with pepperoni & mozzarella wrapped in pizza dough like a panzerotti.
The German brand Dr. Ötker used to sell the Pizza Burger as a frozen product in supermarkets. Unfortunately they discontinued it (probably bcs of low demand) but it was amazing and now there is a small cult on social media hoping for them to bring it back. Honestly one of the best late night snacks/meals you could have

As a South African I must admit that thoroughly enjoy a Cheese Burger Pie. Its one of my go to on the go pies to grab from the petrol station after a long night of drinking.
Yogurt and cold water with salt, coriander, cumin, and some chat masala is a big thing in India during summer. It's called chaas or buttermilk. It's quite common in South India due to the heat. You can even find the packaged versions in supermarkets and stores all over. Many people actually prefer buttermilk over Lassi in India due to the savory and refreshing nature of buttermilk compared to Lassi
Buttermilk is a different dairy product.
When it comes to burgers I'm with George Motz. "Burgers don't need to be extreme or extravagant. It's a burger." Smash burgers apply to this as well. Why do people feel the need to add two patties to something that's supposed to be a quick meal on the go and back to work. If I eat a double smash burger I feel like there goes the rest of my day...I'm gonna nap and nothing will be accomplished.
Now people want to add it to a pie!? No...too much and Jesus wept that's a ton of carbs.
I think the water absorbed and trapped in the cheese acts as leavening when heated similar to the water content of cold butter in pie crust and other crisps to make them lighter and crispier.
The second one feels like homemade salty lassi, where we mix curd with water and a little salt and have it

When I first moved to edinburgh 30 years ago the burger pie was sold in 7/11's across the city though they were called cheeseburger puffs with rlish rather than gherkins. I still make them occasionally

A variation of doough in some places of Europe is to use a thick, fermentation made from corn, wheat, millet, or bulgur and add soda water to it than adding lemon juice overtop

sparkingling Water (Lemonade usually) and Yogurt is something I've been havung from a young age. My mother used to do it as a substitude for a few day old Camel's milk in somali cuisine
I've been making those burger pies as sliders for 30 years now. They are always the quickest apps to be eaten at every party. I've also used meatballs, omelletes, sausages and chicken burgers as stuffings.

Quick tip! Scrunch the parchment paper first, then spread it out; this keeps it from rolling up when you lay it out on a pan sheet. Bonus: if you need parchment to go up the sides of cake pan; brush a bit of oil on sides of pan. The parchment paper will stick to sides easily

In the Balkans and Turkey you have the drink Ayryan which is Yoghurt Still Water and Salt.
When it is really hot you sweat a lot and lose electrolytes.
The cold liquidy milk and the salt just hit the spot in the heat.
Sometimes I prefer such a drink to water alone.
I will be trying the sparkling water and mint version - sounds delicious!

I have been enjoying your video a day. I understand the yogurt and sparkling water. My mom used to give me ginger ale and milk when I wasn't feeling to well. If you were older and had seen the Laverne & Shirley show you would know that Laverne ofyen drank Pepsi and milk.
As kids we'd make poor man's milk floats adding milk to pop/soda. It kind've curdled but we enjoyed it. (I'm also of an age when Laverne & Shirley would've been about). 🥛

We have a traditional dish called ab doogh khiar which is doogh with walnuts and cucumbers and rosebuds, and a lot of crushed stale naan and herbs
South African, here... I didn't know the cheeseburger pie is kinda our exclusive thing. They're easy to find wherever pies are sold, but as a more expensive 'premium' option over the usual variety. They make great hangover cures :D

Back in the day I worked behind a meat & fish counter in a supermarket and I was constantly descaling and deboning fish. No matter how much I would scrub I would always find rogue scales on my hands and arms. It drove me mad!
The Doogh made me think of Korean Milkis lightly fizzy yogurt drink. though what you were making definitely less sugar. That carrot! Did not expect it to work so well. Thank you Ben for doing it the cheffy way and then being gobsmacked when that carrot did it better and no wearing scales anymore. Your face Ben told it all. And then the "follow fast" while descaling that sea bass, so cute. That didn't seem to take a ton of effort either. When using the back of the fish, it seemed like it took some effort to get the scales off. Fun attempt Baz, but Jamie is still the TikTok king. but 3 outta 4 isn't bad, best luck next time. That dooch drink is relatively close to ayran - a typical Turkish drink.
I have been making burger pies like that for years. Also when I make my burgers from scratch, I use beef mince or lamb mince,finely chopped onion and garlic, with chopped gherkins and Dijon in the burger, with grated cheese in the mix, and serve with fried onions and ketchup and mayonnaise and either in the pastry or in pitta bread. The lamb ones get parsley and fresh mint in too.
Hi guys! Dried mint is traditional and you can put a sprig of mint on top to serve. Definitely add salt too...some people garnish with a dried rose bud to make it pretty. It's nice to use a sour strained yogurt for that zing! Such a good drink alongside a good Persian kebab and rice dish! ❤❤
Wow it was fun watching you drinking doogh. We mostly use dried mint. And not many of our doogh is with soda or carbonated water. We usually make it with normal water. And the premium version of it would be much more of it in a bowl with ice shreded cucumber dried mint optionally rose petals and crushed bread. I'm glad you liked it😊
I'd imagine that carrot trick could be handy when you're out camping, too? Especially if there's young kids along, and you want them to help with food prep but don't trust them with sharp knives yet.

The Burger Pies we have here in South Africa normally have a cooked tomato relish inside the pastry, which will give you that tang you are looking for. Always a favourite and normally are sold out quick.

I would love it if you could get one of the tons of fundraiset/church/ladies group cookbooks from several different areas of the country and pick several representative dishes in a series. My mum and I tend to have the same cookbooks in our collections, and we may have some extras from here in Eastern NC. If we do have duplicates outside of our collections, I would gladly send them to you....
Back at home we have a drink called "Gespritzte Buttermilch". Which is a special dairy drink with soda water mostly drunk when you go hicking in the mountains. You can add different flavors such as elderberry or cranberry. Refreashing and delicious. Merry Christmas from Austria🇦🇹🎄

Honestly, a burger pie sounds like a great idea. Keeps all the stuff inside the 'buns' unlike a normal burger.
About the cheese crisps, I'm a fan of the tapioca based deep fried crisps, both the plain ones and the seafood flavored ones. I imagine that a parmesan crisp of the same type might be awfully tasty too. Like a parmesan shrimp chip. Yum.
I literally just try the carrots trick, it absolutely work! Home cook you guys absolutely have to do this!
The thing is its slow (maybe because im not used to it) i work at restaurants that have fresh fish on the menu and we have place to scale the fish so this method isn't gonna work just because how fast we scale fish, but for home cook where you don't have the capability to wash every corner of your station its worth doing also just roast the carrot or stir fry it job done
Burger pies have become more common in New Zealand too over the last few years. Highly recommend.
