You could try different root vegetables to scale a fish to add different flavors. Perhaps something stronger like ginger could significantly add flavors to the fish.

@TF_NowWithExtraCharacters yes. It scoops them up better. We usually we scaling things like crappy, bluegill, and sunfish/sun perch. What we call pan fish. We did it in the kitchen because we knew we wouldn't have to worry about scales getting everywhere. He would hold the tail and use a controlled motion and off they came and were in the spoon.

love an egg cream - soda fountain staple here in the states (even though there's not a lot of them left). there's a restaurant in my city that does a monthly saturday morning bakery popup out the side door, and along with donuts, coffee and seasonal treats, they always have egg cream on the menu.
17:14 i believe it's the same concept as popcorn or any of the multitude of puffy crispy snacks you can find in India; the oil should've been hot enough that the water content in the dough practically explodes into steam which in turn puffs up the dough into that airy crispy goodness (but not so hot that it starts burning prematurely)
Also, they should NOT have completely dehydrated the cheese. The purpose of the water is to boil inside the cheese and make it puff up like popcorn. If you Dehydrate all the water out of it, of course it won't puff up. They should have gotten the cheese damp with warm water, rolled it out, and immediately put it into the hot oil.
@@knivessportsandadventures9523 I am not sure about that 'immediately' - when making pork rinds, after boiling pig skin, you want to dry it quite well in oven/dehydrator. I would guess that, in addition to moisture, texture of food you throw into oil plays a big part. And the sweet spot is somewhere between freshly boiled --- completely dried.

I am from Bulgaria. In the Balkans and Turkey you have the drink Ayryan which is Yoghurt Still Water and Salt. When it is really hot you sweat a lot and lose electrolytes. The cold liquidy milk and the salt just hit the spot in the heat. Sometimes I prefer such a drink to water alone. I will be trying the sparkling water and mint version - sounds delicious!
While watching my gf also mentioned ayran, and I had the flash of inspiration that the name might just be because it's from Iran originally. Like it's just the iranian drink
@ It’s possible. I am just saying that it is a popular drink nowadays. And it really hits the spot in the summer heat. The salt in it is very important as you lose a lot of fluids in the heat. Even though there is a huge variety of drinks available from water, to fizzy drinks, to energy drinks to sports drinks to beer etc sometimes you just crave ayryan. If you are on the go you can find it pre mixed. if you are at your house you can prepare it yourself.
Don`t do it with fizzy water.... I tried it from an Iranian shop, and as Bulgarian that grew with Ayran all his life, this was more than disgusting ..... I almost threw up.

The cheese crisp failed because the cheese was too dry. Some moisture in the cheese needs to remain when they are fried to turn into steam and puff up.
Agreed, I was wondering was there really a drying phase. First of all you just need to heat it up enough to roll it out. I think they went to far with the hot water; just simply put it into hot tap water briefly, squeeze the excess water out, roll it and drop it in the oil. Wouldn’t having that bit of water combined with the cheese allow the water to turn into steam when it hit the hot oil and cause that big puffing?
For the last one with Parmesan cheese, it's probably because the oil is not hot enough: in the video, the oil boils instantly as the dehydrated cheese is fried, while when you've tried it, the oil was barely fizzling, and it's not even boiling.
Or it's just fake tiktok click bait with clever editing dropped in a dried prawn cracker in the oil to give the effect it was the cheese mix. See this a lot on the platform
Hey Sorted Team I was on Reddit and saw a megathread talking about how amazing it would be to able to pay an extra fee for the Live Shows in order to download them and keep them forever. They are so fun to watch and it would be nice to be able to revisit them in the future. Just a thought. Sending my love to the whole sorted team!
Other shows I follow that have a similar live show/on demand tickets thing put up the show on their store to pay and download it like 6 months to a year after the fact. Some have it as pay what you want, but obviously that can be whatever.
I would love that...I wish I could have seen no way out and the Christmas show they did at the theater. Plus seeing Wild Weekend during the winter when things are gray, icy, snowy and colder than a peguin's patootie... would just make me feel warm in spite of the weather.
I would love to just be able to watch them at all if I missed them the first time, and given that it's not longer live I feel it should be considerably cheaper since we'd miss out on the interactive aspect.
Long time part of the community and have paid for every live show and I have also wanted this for a while. Especially the poker face from the previous Winter Live Show, Snow Way Out. I love all the content they put out!
It would be cool if we could at least purchase individual segments. I would love to buy my mother all the pretentious ingredients pieces of the lives because that is her favorite series and she doesn’t have the time/extra funds to watch the live events. Plus, some of the footage never being available for purchase would be a deterrent to skipping the live airing if the viewer was already interested in seeing all of it.

We’re afghan and we have a lot of similar cuisines to Iran but we have our own twists. We do yogurt, still water, cucumber (diced roughly), mint and a good amount of salt! Served over ice and it’s perfect for a warm day to eat with something heavy like kababs!
Sour, or "fizzy" dairy might not be a thing in the UK, but we drink sour milk called piimä in Finland, it is close relative to kefir and in general those types of drinks are popular all over. My Kenyan girlfriend said piimä reminds her of the similar drink back in her home country. Cannot remember the name of their version right now though...
I live in Idaho, and we have a local Shawarma restaurant with a yogurt drink that's similar to kefir. I loved it and none of my friends did so I got to enjoy, like, four portions in one sitting. 🤭
Soda gembira in Indonesia, Calpis in Japan, Milkis in Korea, I forget the name in Indian....yeah, fizzy dairy is definitely a thing all around Asia as well. I've had Ayran with carbonated water from Turkish friends too.

I recall having to prep fresh red and grey mullet for a banqueting menu back in the day, descaling them was a vicious battle, i still have the scars. Could have done with a carrot that day.
similar to the doogh,back home in sri lanka we have this drink called moor (prounced more), made with yogurt, distilled/bottled water,finely chopped purple onions and green chilli and salt according to taste.Its really thin and water down and served chilled .Its the most refreshing drink I have ever had and suits all ages. 6:22 ❤
The Burger Pies we have here in South Africa normally have a cooked tomato relish inside the pastry, which will give you that tang you are looking for. Always a favourite and normally are sold out quick.
For scaling fish, my grandfather used to keep the bottle caps from the day of fishing, nail them to a piece of scrap wood from the pile kept in the boat shed, use it and toss it! Worked near perfect, re-used stuff that was waste (before recycling was a thing) and no real cleanup!
The scaling fish conversation reminded me of when my SIL rented a swanky cottage for the whole family and on the first night my FIL cleaned some fresh caught fish in the kitchen 😂

Oh my gosh that carrot de-scaler hack is magical! And as far as food safety goes, as long as you wash the carrot and cook it, it's still fully edible so no food waste in actuality! Will HAVE to try that next time, it looks too good to be true...
My dad used 2 things to descale fish. For carp he had a short plank with a beer cap nailed to it. For every other scaly fish he had short round stick with this exact angle, it worked wonders!
@SortedFood 7:16, technically what you made is ayran a Turkish drink. Often called a sister drink to doogh. Doogh is made from fermenting milk. Ayran is basically diluted yougurt.
Ayran is one of the best things Turks ever invented. And man they have a lot of great food invented! But one thing I've learned to make it: since there are different Yogurt bacteria stems, the best Yogurt to use is the sour Turkish yogurt. It is perfect! To get the bubbly, fizzy effect I use sparkling water, which is not traditional, but works quite well. Mint, a pinch of salt and beaten until it gets a bit of foam. Drink it cold during hot days...perfection! Also, Döner Kebab and Ayran is a must!

I think the water absorbed and trapped in the cheese acts as leavening when heated similar to the water content of cold butter in pie crust and other crisps to make them lighter and crispier.
Doogh is pretty common with different names in that entire region. I'm from Pakistan, we do 2/3 milk and 1/3 sprite/7up to make a refreshing summer drink, the fizz and hint of lemon also makes the milk taste creamier than it is. Kefir is fermented, regular yogurt isn't, so they aren't synonymous in my opinion.

The drink is usually served chilled and is particularly refreshing in the hot and humid climate of Mauritius. You can find Alouda in most restaurants and street food stalls on the island.
Regarding the fish scaling, use a spoon instead of a knife. It works similarly to the carrot thing, and it's sturdier. The spoon catches a lot of the scales and keeps them from flying everywhere

I did this kind of thing once! It was way less complicated; I just browned a giant meat patty, then topped the whole thing with hash browns, but it in the oven, and then for the last few minutes covered it in cheddar cheese and put it under the broiler. I called it "cheeseburger hash pie". Don't lose control of the salt shaker.

the fish scaling trick: the carrot also isn't rigid nor springy enough to flick anything. the Knife is so stiff, the scales fly: w the carrot, the surface of the carrot just gets cut up a little, absorbing that energy, and keeps going.
I've been making those burger pies as sliders for 30 years now. They are always the quickest apps to be eaten at every party. I've also used meatballs, omelletes, sausages and chicken burgers as stuffings.

So so sooooo happy you tried doogh!!! I prefer with dried mint . Some iranian restaurants serve it in copper cups which I think makes it feel extra cold. And some add dried lime powder as well as rose petals. Not many British guys like this drink, so I am delighted you do! It is certainly good for your digestive system and liver as opposed to other canned drinks. Apparently consuming yogurt with lamb means your body absorbs less fat from the lamb due to the calcium in the yogurt. So great with a kebab!!!
My aunt used to make something similar to doogh. She would make lassi with plain yoghurt and add Fanta to it. It gave a slightly orange color and flavour and I was sceptical as a kid until I tried it. It was delish!!
As a South African I must admit that thoroughly enjoy a Cheese Burger Pie. Its one of my go to on the go pies to grab from the petrol station after a long night of drinking.
A variation of doough in some places of Europe is to use a thick, fermentation made from corn, wheat, millet, or bulgur and add soda water to it than adding lemon juice overtop
Hi guys! Dried mint is traditional and you can put a sprig of mint on top to serve. Definitely add salt too...some people garnish with a dried rose bud to make it pretty. It's nice to use a sour strained yogurt for that zing! Such a good drink alongside a good Persian kebab and rice dish! ❤❤

As kids we'd make poor man's milk floats adding milk to pop/soda. It kind've curdled but we enjoyed it. (I'm also of an age when Laverne & Shirley would've been about). 🥛
Wow it was fun watching you drinking doogh. We mostly use dried mint. And not many of our doogh is with soda or carbonated water. We usually make it with normal water. And the premium version of it would be much more of it in a bowl with ice shreded cucumber dried mint optionally rose petals and crushed bread. I'm glad you liked it😊

The other mistake was that they were using boiling water instead of I imagine warm water since he was able to pull it out with his hands

Cheese Burgers in Pastry has been around since the 90s in the UK, we called them Space Burgers and had them at school, fucking amazing.

I've never seen a cheeseburger pie with 2 patties, or one with pickles. Typically they are only filled with Monkeygland sauce.

You could try different root vegetables to scale a fish to add different flavors. Perhaps something stronger like ginger could significantly add flavors to the fish.

We’re afghan and we have a lot of similar cuisines to Iran but we have our own twists. We do yogurt, still water, cucumber (diced roughly), mint and a good amount of salt! Served over ice and it’s perfect for a warm day to eat with something heavy like kababs!

Sour, or "fizzy" dairy might not be a thing in the UK, but we drink sour milk called piimä in Finland, it is close relative to kefir and in general those types of drinks are popular all over. My Kenyan girlfriend said piimä reminds her of the similar drink back in her home country. Cannot remember the name of their version right now though...
I live in Idaho, and we have a local Shawarma restaurant with a yogurt drink that's similar to kefir. I loved it and none of my friends did so I got to enjoy, like, four portions in one sitting. 🤭
Soda gembira in Indonesia, Calpis in Japan, Milkis in Korea, I forget the name in Indian....yeah, fizzy dairy is definitely a thing all around Asia as well. I've had Ayran with carbonated water from Turkish friends too.

From Cape Town here. Usually the burger pies with have some type of burger relish or like a sweet chilli sauce in it as well to cut through the grease of the pastry and make it less dry.🇿🇦

I recall having to prep fresh red and grey mullet for a banqueting menu back in the day, descaling them was a vicious battle, i still have the scars. Could have done with a carrot that day.
similar to the doogh,back home in sri lanka we have this drink called moor (prounced more), made with yogurt, distilled/bottled water,finely chopped purple onions and green chilli and salt according to taste.Its really thin and water down and served chilled .Its the most refreshing drink I have ever had and suits all ages. 6:22 ❤

The Burger Pies we have here in South Africa normally have a cooked tomato relish inside the pastry, which will give you that tang you are looking for. Always a favourite and normally are sold out quick.

For scaling fish, my grandfather used to keep the bottle caps from the day of fishing, nail them to a piece of scrap wood from the pile kept in the boat shed, use it and toss it! Worked near perfect, re-used stuff that was waste (before recycling was a thing) and no real cleanup!

Oh my gosh that carrot de-scaler hack is magical! And as far as food safety goes, as long as you wash the carrot and cook it, it's still fully edible so no food waste in actuality! Will HAVE to try that next time, it looks too good to be true...
My dad used 2 things to descale fish. For carp he had a short plank with a beer cap nailed to it. For every other scaly fish he had short round stick with this exact angle, it worked wonders!
Cheeseburger pies are the best! We get them here at garages.

7:16, technically what you made is ayran a Turkish drink. Often called a sister drink to doogh. Doogh is made from fermenting milk. Ayran is basically diluted yougurt.

Yes thank you! There's no carbonated water in doogh, it's all fermentation.
Ayran is one of the best things Turks ever invented. And man they have a lot of great food invented! But one thing I've learned to make it: since there are different Yogurt bacteria stems, the best Yogurt to use is the sour Turkish yogurt. It is perfect! To get the bubbly, fizzy effect I use sparkling water, which is not traditional, but works quite well. Mint, a pinch of salt and beaten until it gets a bit of foam. Drink it cold during hot days...perfection!
Also, Döner Kebab and Ayran is a must!
@ I use it instead of buttermilk when doing pancakes. The fizziness reacts with baking powder and pancakes become super fluffy

5:48 Drink is actually a type of turkish drink "ayran" and it is mostly served in turkish baths which we call "hamam" and we put a little bit more salt in it. After a hot hamam session it feels very nice
I think the water absorbed and trapped in the cheese acts as leavening when heated similar to the water content of cold butter in pie crust and other crisps to make them lighter and crispier.

Doogh is pretty common with different names in that entire region. I'm from Pakistan, we do 2/3 milk and 1/3 sprite/7up to make a refreshing summer drink, the fizz and hint of lemon also makes the milk taste creamier than it is. Kefir is fermented, regular yogurt isn't, so they aren't synonymous in my opinion.

It's my childhood! My grandma used to mix the super sour unsweetened yoghurt with water and mint then leave it in the sun and I remember once it's been chilled, it's incredibly sour, minty, fizzy, and refreshing ❤

Regarding the fish scaling, use a spoon instead of a knife. It works similarly to the carrot thing, and it's sturdier. The spoon catches a lot of the scales and keeps them from flying everywhere

I did this kind of thing once! It was way less complicated; I just browned a giant meat patty, then topped the whole thing with hash browns, but it in the oven, and then for the last few minutes covered it in cheddar cheese and put it under the broiler. I called it "cheeseburger hash pie".

the fish scaling trick: the carrot also isn't rigid nor springy enough to flick anything. the Knife is so stiff, the scales fly: w the carrot, the surface of the carrot just gets cut up a little, absorbing that energy, and keeps going.
I've been making those burger pies as sliders for 30 years now. They are always the quickest apps to be eaten at every party. I've also used meatballs, omelletes, sausages and chicken burgers as stuffings.
In South Africa we have cheeseburger pies in the shops! It's so nice to see my countries food on the channel.

So so sooooo happy you tried doogh!!! I prefer with dried mint . Some iranian restaurants serve it in copper cups which I think makes it feel extra cold. And some add dried lime powder as well as rose petals. Not many British guys like this drink, so I am delighted you do! It is certainly good for your digestive system and liver as opposed to other canned drinks. Apparently consuming yogurt with lamb means your body absorbs less fat from the lamb due to the calcium in the yogurt. So great with a kebab!!!
My aunt used to make something similar to doogh. She would make lassi with plain yoghurt and add Fanta to it. It gave a slightly orange color and flavour and I was sceptical as a kid until I tried it. It was delish!!

A variation of doough in some places of Europe is to use a thick, fermentation made from corn, wheat, millet, or bulgur and add soda water to it than adding lemon juice overtop
Hi guys! Dried mint is traditional and you can put a sprig of mint on top to serve. Definitely add salt too...some people garnish with a dried rose bud to make it pretty. It's nice to use a sour strained yogurt for that zing! Such a good drink alongside a good Persian kebab and rice dish! ❤❤
I have been enjoying your video a day. I understand the yogurt and sparkling water. My mom used to give me ginger ale and milk when I wasn't feeling to well. If you were older and had seen the Laverne & Shirley show you would know that Laverne ofyen drank Pepsi and milk.
As kids we'd make poor man's milk floats adding milk to pop/soda. It kind've curdled but we enjoyed it. (I'm also of an age when Laverne & Shirley would've been about). 🥛
Honestly, a burger pie sounds like a great idea. Keeps all the stuff inside the 'buns' unlike a normal burger.
Wow it was fun watching you drinking doogh. We mostly use dried mint. And not many of our doogh is with soda or carbonated water. We usually make it with normal water. And the premium version of it would be much more of it in a bowl with ice shreded cucumber dried mint optionally rose petals and crushed bread. I'm glad you liked it😊
