Looks great. We have plenty of Jamaican takeaways here in London. When we got married, my wife and I decided to order 150 freshly made Jamaican patties delivered to the wedding at 10.00 pm. Everyone was super drunk and when those things turned up it was an absolute sensation. People were on the dance floor with Jamaican patties in one hand, a drink in the other hand, pastry crumbs all over their faces and clothes. It was so funny.
Looks great. I make these every couple of months, or so. Sometimes with lamb instead of beef. Here's my tips, add a couple of tablespoons of breadcrumbs to your choice of meat, (plus salt, black pepper, chopped scotch bonnet, onion, thyme, all spice) and a tablespoon of curry powder. For your pastry, add a tablespoon of beef suet granules instead of butter, it gives your patties a lovely flaky finish. Don't forget to brush patties with egg wash before cooking.
Pro tip: Add the allspice in way earlier, like between the onions and scotch bonnet. It takes a long time for allspice to really breakdown and release all its flavor so putting it in early results in a much toastier, deeper, richer, almost sweet flavor.
Quick tip for keeping your plastic wrap from sticking to itself when you cut it….Keep the roll (box and all ) in the refrigerator. The cold air keeps the static down. Amazing looking food, as always! Gonna have to try it!!! Love you guys 😘
I'm Haitian but I'm obsessed with Jamaican beef patties! Didn't realize it was turmeric that made the dough this yellow, I should have known. Turmeric has anti-inflammatory properties, is good for arthritis and and can prevent alzheimer's disease, yay!
Yeah most of us use, a mixed curry powder, I actually think tumeric on it's own would give it a weird flavour, but you don't use much anyway so you might not taste it. Honestly he's most of the way there with this but, still missing some touches I've learned from pro caribbean cooks
It's also possible to overdose on tumeric and poison yourself. I'd just eat it but avoid supplements. Also, the Alzheimer's thing isn't true. The only possible mitigator we've discovered of Alzheimer's is partner dancing. We don't even understand how it develops in the first place, there is no known preventative, and there is no cure. It's probably just a result of brain matter aging significantly.

Funny! I do the same thing. I'm known for putting freshly roasted, boiled, or deep-fried food in my mouth WELL before I should have! I just could not wait for it to cool down. Not kidding, it immediately started boiling my saliva. My family could hear the sizzling sounds coming from my mouth. One time, I ate a scalding roasted baby potato that was so hot that I swallowed it without chewing (because it was too hot to keep in my mouth and I was too mortified to spit it out in front of people). Since I didn't chew it, it lodged in my throat as I tried to swallow. RESULT: I almost choked and the potato burned my throat and sloughed several layers of skin/membrane from my mouth and esophagus. Sam, you are my people, but I hate to say it... We are idiots!
My wife is from Jamaica. She does make a smattering of Jamaican dishes (brown stew chicken, rice & peas, fried plantain, etc)., but now I have the chance to treat her to one. Thanks!
A variety of these are pretty common throughout the Caribbean. I had these when I hired a local guy in Antigua to show us the island. Part of the tour was to stop at a little store in the middle of nowhere and he brought these out to us. The guide told us that it was a common lunch item for local workers. Now I know how to make them at home. Thanks Sam

As a jamaican was very excited to see someone make this on a bigger channel, these are such a pain to make from scratch normally though. Also ever since i moved out of jamaica no one by me sells them. One thing im use too though is we soak a thing of bread in water and add it to the meat. Kinda like an odd way of doing breadcrumbs and the crust is sometimes done flakey but again, an annoying to do at home

We made this last night. I had 1.5 pounds of ground beef and wanted to use it all at once so we doubled the crust recipe, and tripled the filling recipe. We used a 6-inch cutter (round plastic disposable container, with a narrow rim, turned upside-down) to form the crust disks. They turned out fantastic! I used two finely minced habaneros (no seeds/no membranes) because I was timid. I wish I used three (my peppers were rather tiny though). I also added a fist full of minced cilantro to the filling (because I like it), and I added about ~1-1/2 Tablespoons of tomato paste to thicken the "juice," and deepen the flavor. At 6-inches, and with a double-recipe of crust, it produced 18 medium-sized patties (smaller than yours but larger than most dumplings). They were flakey and freaking-tastic! Thank you, so much, for this recipe. I look forward to making it, again and again!
Those look really good I live in Atlanta GA ,I was having my car worked on and in the same shopping Plaza was a Jamaican grocery store so I wanted something to drink so I went in there and the guy says to me I just pulled beef Patty out of the oven so I figured well I could try it one never had one first thing he asked was if I liked hot food spicy and I said yeah I love it. That was also the first time I had Scotch bonnet pepper I thought the back of my head was gonna come off but it was so flavorful and delicious pastry Patty OMG lol I bought 20 of them and took him home and put him in the freezer and I became addicted to Jamaican beef patties. 🎄✌💖💪👨🍳🎅🚌👍

I was first introduced to these in Jamaica NY back in 1980, but living in South Florida, there are quite a few Jamaican bakeries, and I will occasionally stop and get some.. Fold butter/margarine/shortening into the crust when rolling it for a flakier sweeter crust. You can add carrots, potatoes, or some other vegetables to the meat when cooking since they go well with beef. When you make the crust, you can leave it in its wrap and refrigerate or freeze it for days - weeks and it will be fine. This is for those who don't want to keep making crust by hand since it takes like 30 minutes - 1 hour to do so. Same for cooking the meat and refrigerating it beforehand.

I have to just say, Sam is the one who inspired me to cook. I purchased the Nakiri, tried a few recipes and haven't looked back. I highly recommend cooking ribs the way Sambo cooks them. This is how a Jamaican Beef Patty should be - made with quality ingredients and care, and filled with a healthy (i.e., full) amount of meat filling. I recently went to a truck cart purporting to sell authentic Jamaican cuisine on the corner of 14th St and JFK Boulevard in Philadelphia, PA, and decided to take a chance on their fare by ordering this most basic of national dishes, and while the crust was very good, they were so anemically thin it was an insult to the whole nation. And on top of that, THEY HAD NO COCOA-BREAD to sandwich the poor little things (I bought two). If anyone lives in the area and have seen the truck I'm talking about, DON'T WASTE YOUR MONEY BUYING ANYTHING FROM THEM. The owner of that truck should be sued for false advertising.

Those are terrible lol. Idk, if you’re actually in NY, I heavily recommend at least hitting up the actual Golden Krust stores, but you’re better off just going to a local Jamaican bakery instead. Tons of them in Canarsie, Brooklyn and Jamaica, Queens.
Sam you worked the shit outta that crust my bruva. My fathers East Indian from Trinidad. My grandma taught me from a kid to make pepper sauce, and crust for Roti, and meat pies. Indian Trini’s usually add smashed chick peas to the dough and diced potatoes to the meat (lamb is best). My grandma always “hot up” de Turmeric in a skillet to make de flavor pop, mon. Watched this the day it came out, and had almost all the ingredients - had to substitute in a jalapeno for the pepper (no heat). Very tasty. Girlfriends reaction: you need to make a triple batch, and freeze some. Definite new addition to the cooking rotation.
Here in the U.K. there’s a lot of Jamaican people and people with Jamaican heritage. It came from the British bringing over pastries to the West Indies; or so I’ve been told. The great British Cornish pastie is a great pastry but the Jamaicans took it to a whole other level with beef shortening and tumeric in the pastry to make it flaky and orange coloured. And that’s not to mention the filling which is spicy and warming. Best food ever.

When my stomach could still handle truly spicy things, I used to make something called "Nuclear Salsa", which had all of the peppers, from as mild as pasilla/ancho, to jalapeno, anaheim, serrano, cayenne, habanero, scotch bonnets, and topped it off with big dollops of Dave's Insanity sauce. One night I was at a house party, making a batch. having cocktails (as you do)....and forgot my gloves. At one point after many margaritas and Modelos, I needed to throw a piss (as you do), and made the mistake of handling my bits.... NEVER HANDLE YOUR BITS AFTER TOUCHING HOT PEPPERS. Ouuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuchhhhhhhhhhhhhhhhhhhh!!!!

Its interesting the origin story of the Jamaican beef patty, they derive from British pasties like the Cornish pastie, they were basically brought over to the Caribbean and then adopted and adapted slightly to regional ingredients in the the likes of Jamaica, so say scotch bonnets were added etc.

Hi Sam! I'm from Germany, and I have to say, I love your channel, I love the way you make stuff, and I especially love, that you don't edit out, when things go wrong. Or you burn your mouth :-). Actually this was the first of your recipes I made. I left out the cheese, because I'm not a big fan of it. However, it was great!! I used a tortilla press for the dough instead of cutting it out. Worked perfectly, and there are no remains in the end. Looking forward to your next recipes!!

Those are very popular in almost every pizza shops throughout NYC. They also serve them inside a coco bread bun. Mozzarella cheese is the most common. Getting the dough right is a major challenge. More like a pot pie rather than empanada. A company named "Golden Krust" is a Jamaican bakery is famous for them and you can buy a box frozen at most grocery stores. Next time you're in NYC don't forget to try the real deal. Thanks for sharing and stay safe guys.
Bought Golden Krust patties in Wisconsin. Disappointing! Beef filling was like blended baby food. Jamaican patties made in Toronto ON, favorite lunches in high school cafeterias there, had ground beef fillings in their golden crusts. Yum!

Do you guys also blend the meat? When I get a patty the meat is usually softer and more fine. Now crumbly with a bite to it like regular ground beef.

I have to just say, Sam is the one who inspired me to cook. I purchased the Nakiri, tried a few recipes and haven't looked back. I highly recommend cooking ribs the way Sambo cooks them. Roasted in the oven at 350° for an hr and 15. Made them for Thanksgiving and they were a hit. Thank you Sam and crew for making excellent content. 💪

This is how a Jamaican Beef Patty should be - made with quality ingredients and care, and filled with a healthy (i.e., full) amount of meat filling.
I recently went to a truck cart purporting to sell authentic Jamaican cuisine on the corner of 14th St and JFK Boulevard in Philadelphia, PA, and decided to take a chance on their fare by ordering this most basic of national dishes, and while the crust was very good, they were so anemically thin it was an insult to the whole nation. And on top of that, THEY HAD NO COCOA-BREAD to sandwich the poor little things (I bought two). If anyone lives in the area and have seen the truck I'm talking about, DON'T WASTE YOUR MONEY BUYING ANYTHING FROM THEM. The owner of that truck should be sued for false advertising.

To be honest the Golden Krust bakery NY spicy beef ones at Dollar Tree are pretty good too. RIP Lowell Hawthorne. Patties should be eaten wrapped in warm coco bread btw
Those are terrible lol. Idk, if you’re actually in NY, I heavily recommend at least hitting up the actual Golden Krust stores, but you’re better off just going to a local Jamaican bakery instead. Tons of them in Canarsie, Brooklyn and Jamaica, Queens.

you have to fold and layer the pastry and have to roll it out thinner. flaky pastry is key with patties

My fathers East Indian from Trinidad. My grandma taught me from a kid to make pepper sauce, and crust for Roti, and meat pies.
Indian Trini’s usually add smashed chick peas to the dough and diced potatoes to the meat (lamb is best).
My grandma always “hot up” de Turmeric in a skillet to make de flavor pop, mon.

I made mine yesterday but added much more seasonings than he did, ie. Chicken cube, oregano and curry, both inside the meat and in the crust mix.

Watched this the day it came out, and had almost all the ingredients - had to substitute in a jalapeno for the pepper (no heat). Very tasty. Girlfriends reaction: you need to make a triple batch, and freeze some. Definite new addition to the cooking rotation.

Here in the U.K. there’s a lot of Jamaican people and people with Jamaican heritage. It came from the British bringing over pastries to the West Indies; or so I’ve been told. The great British Cornish pastie is a great pastry but the Jamaicans took it to a whole other level with beef shortening and tumeric in the pastry to make it flaky and orange coloured. And that’s not to mention the filling which is spicy and warming. Best food ever.
The only thing the dough missing is the beef suet/tallow. 🇯🇲

When my stomach could still handle truly spicy things, I used to make something called "Nuclear Salsa", which had all of the peppers, from as mild as pasilla/ancho, to jalapeno, anaheim, serrano, cayenne, habanero, scotch bonnets, and topped it off with big dollops of Dave's Insanity sauce. One night I was at a house party, making a batch. having cocktails (as you do)....and forgot my gloves. At one point after many margaritas and Modelos, I needed to throw a piss (as you do), and made the mistake of handling my bits....

american cheese is just emulcified chedder; melts better and keeps that creamy melty texture without the milk fats separating out.

Its interesting the origin story of the Jamaican beef patty, they derive from British pasties like the Cornish pastie, they were basically brought over to the Caribbean and then adopted and adapted slightly to regional ingredients in the the likes of Jamaica, so say scotch bonnets were added etc.
They were way more than “slightly” changed.

Hi Sam! I'm from Germany, and I have to say, I love your channel, I love the way you make stuff, and I especially love, that you don't edit out, when things go wrong. Or you burn your mouth :-). Actually this was the first of your recipes I made. I left out the cheese, because I'm not a big fan of it. However, it was great!!
I used a tortilla press for the dough instead of cutting it out. Worked perfectly, and there are no remains in the end.

Those are very popular in almost every pizza shops throughout NYC. They also serve them inside a coco bread bun. Mozzarella cheese is the most common. Getting the dough right is a major challenge. More like a pot pie rather than empanada. A company named "Golden Krust" is a Jamaican bakery is famous for them and you can buy a box frozen at most grocery stores. Next time you're in NYC don't forget to try the real deal. Thanks for sharing and stay safe guys.
Bought Golden Krust patties in Wisconsin. Disappointing! Beef filling was like blended baby food. Jamaican patties made in Toronto ON, favorite lunches in high school cafeterias there, had ground beef fillings in their golden crusts. Yum!

In Costa Rica we called them Patí (patís). Smaller, no onion or cheese but it def comes from this. Soooo good when done well!
