I have been a fan of your previous beef patty recipe. The one where you use egg powder for color. That works really well for me, so I might pass on the "hard to find" seeds. I noticed you didn't use the immersion blender to cream your beef filling this time. Any particular reason?
Sup! My immersion blender recently broke and I didn't replace it and I like to mix up techniques...I have a few other patty recipe videos and all of them add a bit of extra value by not repeating techniques or ingredients. Not blending also works too👌🏾
@@feedandteach Oh right yeah, that's pretty sensible. I've seen your other patty videos, but am fixated on the original beef patty one. I'm quite successful with it and the patties have just the right texture. A magical mix of flaky and chewy.

Suet is more dense than butter but its the same weight

yes...its very authentic now!
I'm in Texas and couldn't find suet. Look for grass fed, grass finished beef tallow.
Thanks! My local butcher told me its probably "Rindernierenfett" which translates too something like beef kidney tallow.
Finally, the real deal, annotto (not curry powder or turmeric) suet (not vegetable oil) and butter (not margarine). Now we need to toss the ketchup and get back to using tomatoes and tomato paste as it was done before the 80's (watch these Jamaican cooking videos and see how often people grab a ketchup bottle). Sometimes watching these videos on Jamaican cooking makes me realize, very few truly know how to make authentic Jamaican food. Another peev, toss the browning sauce. Burn your sugar and brown the meat.

My son made me queue for 2 hours outside HMV in London to see the original grumpy cat. It was ugly too….Aside from this I ain’t never had a pattie with bacon in it. I’m in the U.K. but bacon is not for patties here…it’s for sandwiches or fry up breakfasts. I will have to pass on the annoto, as I’m never gonna find it over here in Blighty.
