    Shrimp paste dip or nam prik gapi is a classic Thai dish that's eaten all over Thailand. It's a bit of an acquired taste, but once you've acquired it there is nothing quite like it. Not everyone is a fan of shrimp paste, but you might be surprised. Even Adam loves this dip!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.

    You totally underestimate how much ppl love this sauce. First time I came to Thailand and was introduced to it, I was gone. Tom Yum Goong and green curry became tourist food. I introduced it to my sister in NY and a few months later she called me up crying saying she had pregnancy craving for that sauce. Same drool factor happened to my mum and Aussie friends. It’s unforgettable and so addictive

    For non-thai people, this dish would be challenging to eat because of the smell but once you get used to it you couldn't stop eating this! I really love nam prik gapi 😋😋

      when i first smelled gapi, it smelled to me like tourtle food, which i didn't dislike actualy, it's kind of addictive, i cannot prevent myself from smelling it each time i use it

      It is foul smelling but honestly most fermented foods “smell” a little...that’s how you know it’s good. 😅

      Actually, this is also a staple in the Philippines. This is called Bagoong in our country. And we have 2 main varieties bagoong alamang (shirmp) and bagoong isda (fish). We often use it as dipping sauce for plenty of dishes abd food. Kare-kare (peanut butter oxtail stew), fried vegetables (okra, eggplant, etc), unripe indian mangoes, fresh singkamas (which is a kind of turnip). Of course, it is also used as main ingredient for other dishes such as Binagoongan which is a Pork Dish that uses Bagoong Alamang as base for the sauce, we also have pinakbet, and other vegetable soup that is mostly staple in the Northern part of the country (ka-Ilocanohan).

    In Vietnam it's called mắm tôm. We eat it with boiled pork belly or fried tofu and rice noodles (vermicelli) and lots of fresh greens and herbs. This is such a special sauce something different from your everyday fish sauce dipping.

    We Lao people love Jeow gapi!!! One of my favorites growing up and still to this day. Happy to see Pai do a video on this.

      My first year in Thailand was at Udon Thani. To this day, I prefer the Isan/Lao cuisine.

    This looks amazing! I'm a native American but I have learned that fish sauce is one of my favorite ingredients, bar none. I love seafood and funkiness and anchovies on my pizza, this looks completely up my alley. I'm not even from an Asian American household, I'm half white and half black but I love this flavor profile

      As a south-east asian who grew up on this sauce, she really means it when she says a little goes a long way! It is packed with umami and flavor so if you do make it, start off with just a little dab on your food. A little dab is seriously all you need. It really elevates foods like veggies and sour fruit. My favorite is to use it on steak and unripe mangos :)

      Marinate your favorite cut of steak with fish sauce n fresh black pepper, then cook it and base with butter. Soo good.

    I recently returned from my 2nd trip to Thailand, and this dish was high on my "must try" list. And like many of the other comments say, for a western toungue the first bites were a bit...not great. We really don't have a lot of these strong fermented tastes. Throughout the meal I found myself coming back more and more to the Nam Prik. It was so obvious to me that, while I hadn't quite acquired the taste, once you did get to that point this is a dish you would keep coming back to. And sure enough, today I'm craving it hence I've landed on this video!

    In the Philippines, we have bagoong. The same as nam prik gapi but a little chunkier. The best with steam veggies, green mango or jicama.

    Made this today with rice, asparagus frittata and sliced cucumber and shared it with my 83 year old mom. It was very edible and definitely unique, but it's potent! In addition to trying just a tiny bit on each item, I also mixed a small amount all together with the rice and frittata combined and that was perhaps even better! I wish I had time to fry up the eggplant. I gave the dog some with rice, and he kept barking at me because he wanted more! I only added one dried and rehydrated Thai pepper with the seeds removed, and it wasn't very spicy. Although I might not make it again, I am really glad I tried it. I will keep this recipe, however, because if times get tough, I would absolutely make this if I was craving something savory and didn't have meat (dried shrimp is plentiful here in New Orleans). Thank you so much, Pailin, for sharing authentic recipes with us. I cook your creamy Tom Yum Goong recipe on a regular basis, and I love it so much, I even grow my own lemongrass, kaffir lime leaves, cilantro and galangal!

    Myanmar also has a very similar dip called ngapi yay but made with fermented small fish instead and eaten with a variety of fresh veggies. It is an essential part of any Myanmar meal.

    Shrimp paste is hardcore even for South East Asians. My dad loved it, while my mom hated it. It usually comes down to concentration. It's very strong in both smell and taste, so small amounts will be easier to handle. A quick stir fry with string beans is a quick introduction to this flavouring - again use a small amount at first.

    Yes!!! My this my favorite dish and my first choice for comfort food! I don’t know if this is a family thing or a regional thing, but my mom always saves some of the water from parboiling the vegetables and adds it to the nam prik to lighten the consistency a bit. My favorite side is definitely the cha-om omelette too!

    I love this stuff, makes me sweat like crazy from the heat but tastes so good. I don't think it really smells that bad. Local restaurant when I was in Thailand always gave it for free with fresh veg.

    In Bangladesh it is called sidol in our chakma tribe and a very essential part of chakma cuisine ,the most important cooking ingredient cause chakma dishes are incomplete without this ,I love this though it smells strong

    Thanks for the explanation on the different shrimp pastes! I didn't realize the Chinese version was different... I used it once for พริกแกง ปักษ์ใต้ and the final dish was inedible it was so salty. The experience made me doubt my Thai cooking bible but now I know!

    We also have something like that here in the Philippines. We call it “Bagoong Isda” bagoong means shrimp paste and isda means fish. It’s almost like a fish sauce and goes well with green mangoes

    Reminded me of how my mom made her belachan paste. However, since she passed away I have trouble recalling what are all the ingredients and steps required to make her paste. You have thankfully provided the missing links. I appreciate it. and you did a great video of it-fantastic! Thanks you.

    Hi Pailin. Just purchased the chinese shrimp paste and want to add, goes great with roast pig (lechon). I purchase the two or more ribs from local chinese bbq purveyor and have them cut into small pieces. At home i smather the shrimp paste over the ribs. A little orange peel and minced ginger to balance the paste and sugar sprinkle over for the saltiness. Steam for and hour and half and wahlah, ready to accompany with many bowls of rice. Can sprinkle minced spring onions when serving for added freshness. Think Craig will be reminded of childhood. Your paste here looks delicious also and a must try !!

    this remind me so much of our bagoong here in Philippines, my favorite way of eating bagoong is with fried eggplant, i would choose that any day over any fancy dishes, it's the best thing ever lol

    We used to prank people with shrimp paste. Put it on their upper lip while they’re sleeping. When they wake up to the smell, they’d smell their hands, feet, and everything...of course everything smells pungent. The best part of the prank is watching them trying to smell everything around the house before they realize it’s from their upper lip.

    Haha, I love this! (Called Belacan in Malaysia/Indonesia i think). I cooked this during my college years in an rented apartment. The maintenance guy thought that I killed someone (or an animal) and kept it in the apartment LOL

    Oh my gosh. Im currently pregnant with all day sickness, nausea and can barely eat anything. I stumbled upon this recipe, reminded me of something my mom made when i was little. Let me tell ya.     Good to see another great shrimp paste lover. Today I woke with the smell of sator beans, shrimp paste and anchovis from the fried rice that I made yesterday. It's not going to get more asian than that. I don't think my neighbours love my style of cooking.. because I use a lot of shrimp paste and also buy it by the block.. B|

    Pailin, i tried this side dish because Philippines uses so much of shrimp paste . Oh it is so good and this will make me eat lots of veggies in fact first time ever have eaten raw mini green eggplant. Thank you for sharing this recipe.     Do you know in Bangladesh they call this Nappi? The Chakma and Marma community of Bangladesh uses Nappi sometimes as a dipping sauce and sometimes fries and then makes paste to put in curries. I am not an indigenous of bangladesh but man I will love this dip as I love Nappi.

    I love making fried rice with leftover namprik gapi. Just fry a spoonful or two of the dip in a little oil, then add cooked rice and sti-fry for a minute. If you have some Thai omelet sitting around, shred it up and throw it in the pan as well. If not, just boil some eggs, cut them in halves and serve them on the side.

      My mother doesn't add water at all. She uses only lime juice, palm sugar and use fish sauce when Nam Prik is too sour.

    I love shrimp paste. It is a Southern Chinese (Toisanese) favorite ingredient too. I made shrimp paste fried rice sometimes and oof~ it's good but it's funky afterward too XD. It's great

    This Nam Prik is a popular Thai dish that Thai people eat regularly, probably more than Tum Yam, Kaeng Kiew wan or Pad thai. Because Thai people think that foreigners may not like it because of the smell. Anyway my mom' recipe she won't add plain water. She just uses enough lime juice because we can keep it longer. She adds some ingredients too but I think it is hard to find in the foreign countries. I always have this Nam Prik in the fridge. Whenever I want to eat, I just fry omelet or steamed mackerel and find some vegetables.

    My Thai friends made this back when I was in Uni, so flavorful, it's amazing. We ate it with raw mango. I will definitely try making this. Thank you for this recipe.

      We call "Sweet Shrimp Paste" for dipping with sour fruits. The taste is sweet and salty only(no lime added as the fruit is already sour).

    Nice! Haven't tasted this dip before, must try.
    Recently I made your egg salad recipe from a few years back, and you called for pounded fluffy shrimps, I used a spice grinder and the shrimps became really fluffy and was sooo good on top of the eggs and dressing. BTW that egg salad was awesome, gave me some som tam Thai vibes that I really miss now.

    Here in Indonesia, we the similar chili, the raw and the fried one.. usually w eat with fried tofu, fried Tempe, fried salted fish or squid.. and some fresh veggies.. the taste is soooooo good..

    This dip goes so well with steamed okra which is probably the most exotic, slimiest vegetable out there as well and probably also not the best dish to introduce to a newbie 😂
