  • How I make Country Ham and Redeye Gravy

    Love Country Ham. It is readily available here in LA (Lower Alabama) Florida panhandle.
    I generally give mine a quick rinse, pat it dry, a touch of butter, low temp in a cast iron skillet. Cover to render the fat and moisture out. Flip, leave the lid off to cook down and brown- both sides. Remove the meat, deglaze with hot strong coffee, now the SECRET. A slurry of corn starch (1 teaspoon to 2-4 oz of water) add the slurry to the skillet and reduce the liquid until it leaves a dry trail when the spatula is dragged across the skillet. From there, biscuits and ham cover with gravy, or put the meat back in the gravy...enjoy.

    that is my kind of ham. My parents had it every Thanksgiving and Christmas. My wife won't eat it so I get it when we go out for breakfast. You cooked it crisp like I like it.

    We always put the red eye gravy over our two half of biscuits . Never on the other stuff.

    Ohhhh...you gonna make me do a midnight refrigerator raid. I'm on the coast in MS. Don't see Dukes mayo but Blue Plate will do the trick.

    @little NC Farmer; Red Eye Gravy! Yeah, looks like mine in a BAD hangover!!!! You use oil to start your drippins' have you ever tried fatback or lard? I wonder if it doesn't add a little "extra something" to the gravy? A most excellent video! Thanks for the food lesson!!!!

    I live in a very small town in the NC mountains. We have one grocery stor (Ingles) and they do not carry larger slices of country ham! So I need to look online and see what I cab fin My grandfather hasd a smoke house to cured his own hams and I got spoiled. Few things are better than red eye gravy on a hot biscuit.

    I have heard of red eyed gravy but never seen it made. Thank you for showing how to make it. It all looks really good. I don't really think we have the Dukes in my area of Oklahoma. Never seen it anyway. Wish I could find it I sure would try it. I listen to other you tubers in three other states around you and they use Dukes. They swear by it. Want get nothing else. So must be some awesome stuff I thought. You have a blessed day.

    Never seen water added been eating it since 1948, Your the first I seen cook it like I know it, except for the water.

    Looks great 👍. Only thing that's hard to get around here is a good tomato. I haven't had a good tomato in years and the best place they grow them is North Carolina . Something about the soil there

    I'm 45 mins from Edward's country hams but I've only had ones my family or I raised.. I've ate some at restaurants but not sure who made it.

    Some of the best country ham in the south, is made by Goodnight Brothers, in Boone, NC.

    Looks great Brandon. My mom use to make this but I think she used just water and no coffee. Have you ever heard of it that way and we also used it on top of regular gravy? Maybe a mountain thing I don't know. Great video I love to see your ways of cooking!

      Yes I've made it with water only, if you have "real" country ham, water will work just fine, the reason I'm told for adding coffee is to darken the color, but frying up 2-3 pan fulls will give plenty of color and flavor too. I've never tried it over regular gravy, sounds like something to try, we make "Saw Mill Gravy" which is frying out fat back, and browning some flour in the grease then adding water and/or milk and stirring over low heat until it thickens, man pour that over a hot biscuit and you got a meal!     Red eye gravy goes best with grits and eggs and homemade biscuits but , I guess if you like them like that ,It's fine.

    Dukes Mayonnaise and that brand ham is sold is South Florida Ft. Lauderdale/Miami. No mayo better than Dukes my hubby disagrees.

      I had a great aunt that lived in Dade City Florida and when was visiting one summer she made ham and red eye gravy for breakfast. So delicious 😋

    That's ham au jus, not gravy. 2nd video i've seen where people are advertising red-eye and deliver ham and coffee flavored water. try again.
