I would start with a cold air intake and tune to unlock the rush, but then again the EJ20 is an older engine, is comparison to the newer FA20 engine. The FA20 came out of the box with a lot of undesirable traits (engine power falls flat in the mid-high RPM range) thus it needed a few modifications with a tune to unlock its potential.
I think the car is not meant for you. How you can complain about a controlled acceleration with large power band, and then complain about weight of the car and mention car parts that weigh almost nothing? Most of the increased weight has come from body rigidity, allowing for improved handling with suspension. It seems you want uncontrolled acceleration that makes you a slower driver when doing real performance driving. Might as well just stick to a Tesla for that, for the car enthusiast that do not appreciate a well balanced car you can control and use the whole power band on track, while also going to get groceries and drive a family on the street. I think the perfect car for you is the Tesla Model 3, and the Toyota Prius.
