I want to build a powerwall, is there anything wrong with having all cells in parallel but wiring the packs in series to achieve 12v? Is that a common practice? I'd get a good bms interface with a screen and all that.
You mean building several packs of 1S cells and then wiring these packs in series? Then yes, that is perfectly fine, as long as all your individual packs have similar total capacity.
Thank you for an informative upload. I'm curious what you think about my 20s3p build of used LG MH1 cells. Should I make sure each group of 3 has equal capacity and internal resistance? Is capacity or IR more important to go on when grouping cells? Thanks
Each group of 3 cells should have equal capacity (or as close as possible). I recommend using www.repackr.com/#/pack-builder IR is less important unless you are using your pack in a high drain application.

Hard to tell, you really would need to test the cells. If they are fake chineese cells then they are most likely bad.

Try an RC charger I find It to be a whole lot easier to test and control. ISDT T8 it what I use.
