Diana, I loved this so much. Being Canadian I've never heard of ajiaco and I love being introduced to the real foods of your culture. I am going to try making this over the summer as I seems like a perfect warm weather dish as the corn comes in. And it's so funny that Julie mentioned wondering what you look like - I was wondering the same thing! But I totally get you - it takes time to look halfway decent when I show myself so I can't imagine if I had two videos to put together!
i just made this! following your instructions to the T. it came out great, as far as I am concerned. I am wondering from other videos I skimmed, why you add the guaguacs so close to the end, as other people seem to add it in at the beginning when they add the chicken? also for the few comments that said this isn't ajiaco, don't mind them. I have been to Colombia, and have tons of friends from Bogota who support your video, and so many other recipes and videos online are like yours for this soup. keep up the good work! i love your channel!! and I use your videos and recipes as a guide to make all my Colombian dishes.
Thank you so much, Wendi!!! It's all because I can only find the dehydrated guascas and I don't want all those herbs sticking to the chicken breast. When I'm in Colombia and I'm able to find fresh guascas, which sometimes can be quite difficult in Medellín believe it or not, I add them with the green onion and cilantro but don't remove them till the very end. Thanks for making it!!! ❤️

I love Colombian food but I'm curious about the heavy cream that you talked about. Do you pour it in the soup afterwards and I'm assuming it's optional?
Yes. You serve the heavy cream and capers on the side so people can add them to the soup themselves if they want.

Can I dice the potatoes instead of cutting them round I was thinking that the idea is to almost dissolve them into the soup right?

Hi there! Yes, you can cut them up in little cubes and I recently started using a mandolin to make the slices even thinner which works a little bit better. The one potato that dissolves really well should be the yellow potato (papa criolla) which is what gives this soup a thicker consistency but the ones I find here in the US are frozen and way too small to cut into thin slices. Another trick I use is by blending the soup before serving but I couldn't do it on the video because I didn't think of it until after I added the chicken. Oh well. You can find guascas in some Latin grocery stores here in the US but if you can't you can always get them online at stores like Amazon or www.amigofoods.com/
I know this was several years ago but i do think that the criollas potatoes maybe the same as the baby gold potatoes that are in the supermarket.
They're very similar, in fact, I use them when I'm in a pinch. However, these are a lot more tender.
The “guascas” are called in English “quickweed” or “potato weed”

Esto no es ajiaco , parece caldo; el ajiaco es espezo ademas el ajiaco es una sopa compleja y especifica no es solo sopa de papa y pollo tiene arracacha y mazorca y papa criolla y cosas que la hacen especial .
