If there is detail in the black, you should have no problem changing the color. The difficulty is when the black is solid black and there is no detail in the blacks and shadows. It is tough, though 😀
Once you get to the part where you change the hair color to grey, it seems that when I do that, since my model has black hair, it seems to have no effect when trying to make it a greyer color. I have the weird outline of blue like you said and I did click the eyeball to make it invisible, but the hair remains black after I clip the black and white to the layer below.

Even the example given by Tutvid, he used a brunette, its because someone with black hair has less highlights aka details and trying to change the color will show this lack of details which would then likely have to be manually added later.
Please do a conversion of a portrait or landscape image to a low-poly image in photoshop for your next tutorial....been waiting for a proper tutorial on that....And love your tutorial videos, been following for a long time now!!!! Keep up the great work.
I would also add to hair technique the combination of layer channels to create masking from inverted picture for sharpest details for hair tips etc... But that is another story though... :) But nice tut.

I'm working on a few of those style tutorials. They take a LOOOOOOOONNNG time to figure out and record which is why I don't do as many. No offense, but I do believe that 90% of Ps users have a pretty good idea how to change hair/eyes..etc colors , and if some of them don't, there's plenty of hair color tutorials that'd help'em out . This particular trick has been explained ad nauseam. I was hoping you could make more advanced tutorials photomanipulation-wise, 'cause the ones out here are not that good
But this is the best hair color changing tutorial. Many advanced techniques covered here. I think it's an essential skill that I wanted to cover. Lots more advanced design and manipulation stuff coming too 😏
