Carissa, Iwan & Frankie decided one night over a bottle of wine that moving from North Wales to Portugal would be a good idea. Within a month they were on the road to Portugal to find the perfect piece of land to call their new home. We picked up Albi the cat along the way. The floor looks wonderful! All ready and cosy with the log burner for chilly days. You are learning so much with the help of Nick. You can offer your youth and fitness for his jobs. Just protect your knees with all the gardening and those other jobs.

If you strip the Amaranth seed heads in the opposite direction, it will be a lot faster and you can get it all. Then rub it between your hands to get the seeds out. Save the 'chaff' and spread it out on a small flower bed, and you will get new plants because there will always be seeds left in there.

I came across Amaranth for the first time about 10 yrs ago in an aromatic salad pack from a small organic farm in Hertfordshire, UK. That remains one of the highlights of my life! I know that sounds strange/exaggerated, but it really was superb, eye opening, delightful, wonderful! I have eaten in a couple of the world's most renowned restaurants, and they lived up to their reputation, but that salad was extraordinary.
Young Amaranth leaves in a salad are fantastic
Raymond Blanc once raved about a stew he ate that was the only option in a lonely cottage restaurant in the Jura mountains, saying it was the meal of a lifetime: when it is right, it is right.
PS Since you mentioned Castanea, look up 'River Cottage' and sweet chestnut soup with sage: pigging fantastic! And very easy, very simple

Nick from Project Portugal has been so vital to the rebuilding of the foundation of your main living area. He has done almost everything. You have been so blessed to have him be near you and that he has such a big heart. The tiling and grouting he did has paved the way for you to finish up the edges. You have also done a lot of thinking about how to make this channel a multi stream money maker and I solute you for that. The kitchen, dining living room looks fabulous. Your design is lovely.
If you put you plants in a pillowcase it will be a lot easier to get them all

Yes if you can cook on your stove top it saves buying gas bottles.
You need to go round your land to gather the dead branches for the stove.
On watching your video this week apart from it being a bad year because of the heat your olive trees need a good prune they are too high and straggly.
You have to get a shape like a crown with an open middle so the sun gets in to ripen and you pick all around. It might be worth paying a neighbour to come after the harvest to prune, also you have to keep cutting down any new branches that starts around the trees during the year as this growth doesn't help the rest of the tree. If you prune now you could have a better year next year.

Carissa you are right about the story of Saint Martin. And in some countries, the kids go pass the doors with self made lanterns, and singing about Saint Martin to get candy on 11 Nov. Love your floor!
Use inflatable cone for your pup. They are so much easier to put on and take off. All of you will feel better.
The lampshades are no fun for them or your legs ! We did resort to a small a pair of baby pants to give ours a rest from it at intervals . Bless his little heart , I am sure he is recovering well with your love .

Awww poor Diogo! I used to take the cone off my dog as not needed if we were out for a walk, or doing things where she was busy doing things (like sniffing around, following me and I was with her and could keep an eye on her) and would only let them wear the cone if I could not stay to keep an eye on her. Same with my cat, she so struggled with the cone and one day I came home, and she looked so pleased with herself! There she was giving herself a really good clean and was not at all interested in her wound and stitches! Thankfully I was able to leave the cone off for the rest of the week and she was so much happier.

We have il borza ta San Martin in Malta ( the bag of San Martin) Kids go to families and receive nuts, orange, apple to fill their bag.
The Saint Martin (São Martinho) tale also tells that he was a knight that had just come back from battle, and even though it was raining and cold, he shared his cloak with the peasant.
The kitchen makeover is beautiful - natural colour tones & earthy material (tiles, metal wood stove, wood furniture) against white washed walls make for a very elegant and nurturing atmosphere.
Glad Diogo is running around again, free of the cone! The kitchen is getting better and better, almost finished, so happy for you! Have a blessed week!

I’m rewatching some of your past shows. I see you picking green tomatoes and it reminded me of my mother taking green tomatoes slices, dipping into egg and then coating with corn meal. She would pan fry these like you do eggplant. If you haven’t tried it you might consider. She would also season each time with something new so there are great memories of eating these. They’re good cold too.

Looking good! If you toast the amaranth seeds on a fryinv pan, the puff up and "pop", kind of like popcorn. Great in stir fry, or on yoghurt.
Too bad about the olive harvest. Hope the pruning helps for next year. Gr8 job all on the tiles.
It's normal that olive trees alternate a year of good prodution with another year of poor production. I believe it's called "alternate bearing" in English.

Green tomatoes for breakfast….chop green tomatoes, chop an onion, cook in butter till soft, scramble eggs and pour in tomatoes and onion, cook till eggs are done serve with toast and bacon,
You can add bell peppers 🫑 if you like them.

So glad to see all your hard work come together. You have stuck at it when the going got tough, others might have scuttled back to blighty. Would be good to know more about your longer-term plans for your homestead and life in Portugal, if you are mindful to share. It seems to me that you are now well settled. When I asked a similar q in your first-year I got the impression that you might not want, or be unable, to stay longer term.

Lovely hard work on the flooring! The Amarynth size is gorgeous, definitely worth saving the seeds, might have to see if I can grow that variety in Reno, Nevada. It is beautiful!

In a previous video I noticed you patching your cushions on the couch, crib sheets will cover the entire front and sides. And they come off easily for washing.

Our dog hated the cone so we got her a recovery suit she loves it.

You can make fruit leather with quinces
When my last and current dogs had surgery, instead of the collar, I purchased baby's vests, which worked. Poor Diego. My Rough Collie and then my Shelties could not kep the collars on.
