Just made my first homemade bread (without a bread machine). It turned out great! I love the consistency for sandwiches! And this pullman pan! 😀 Now to see how well it holds up...although sandwich.bread doesn't last long here!
This recipe is a keeper! I do add more sugar because Huba likes sweeter and I make a tansong of 2 Tbls flour and 3Tbls milk from the ingredients for the bread it is so soft, and flakey.

The other recipes I found for pain de mie had milk powder and potato flour which are not ingredients I typically have in my kitchen so your recipe peaks my interest even more Additionally, another concern I had was how to use the lid on this pullman pan. I saw many folks add the lid on before the second proof, while others put the lid on after the rise. I think your tea towel idea is BRILLIANT!!! That way I will have an idea of the rise but the weight of the towel should hopefully prevent the typical dome from forming. Unfortunately the pan really does make the loaf. However, you could try it in an open top long pan. If you splurge on the Pullman pan, you have to feel it's worthwhile for the cost. I use mine frequently for this load, so it was a good investment for me.
Hello, do I have to use a convection oven with fan on for this recipe? I don’t have a convection oven, can I still make it by adjusting the temperature? If so, what temperature do you suggest? Thank you!
Thank you for the question! I don't see any reason why you couldn't! Of course it will not have the square shape, it will rise above the pan in a dome, but won't affect the bread itself!
My dough got warmer and warmer if I use a machine to knead it? Is it Oki or it will effect the overall results as I am not happy with my bread... Its hard and not fluffy and soft as compared to store bought bread.
Thank you for your great question. You can use a machine to knead it, of course, but it sounds like one of two things has happened. Either it have been over-kneaded (for too long) or the bread has "over proofed", in other words, been allowed to rise too long either during the first or second rise. This can often cause heavier, denser bread. Watch your kneading and rising times, and if the issue still persists, try reducing the flour by 1/2 a cup and try again, and if the result remains, try remove another 1/2 cup of flour. But keep a very close eye on your rise and knead times!
Are you meaning Whole Wheat flour? To be honest, I don't think it would work. This load needs a certain content of gluten, which can be difficult to achieve with purely whole wheat flour. Keep an eye for some bread options coming up though, and maybe even some bread experiments!
Same with my new Pullmans! I spoke with USA Pan customer service rep and she offered me several suggestions from exchange to trying to adjust with a screwdriver. Believe it or not, I chose to try the screwdriver. I studied the pan and lid thoroughly by site and feel and it seemed to be the lid was slightly bent in where it curves over the pan. I put screwdriver into the curve and ever so slightly unbending it on both sides. It slipped on the pan perfectly! I got to keep my pans and start using them with no return hassle❤
tried this loaf ,followed the recipe to the letter, first thing it was way too wet had to add more flour than it took forever for first rise and the second one well i ,gave up after 2 hours , i just cant figure out what went wrong diden`t look anything like yours.
Oh dear. What environmental factors are you dealing with? Is it very humid? What elevation do you live at? There are a lot of different factors which could affect this recipe.

The ingredient list is in the video, I just copied on a notepad. I have made this recipe twice and watch the video as I mix to be sure to get the dough to the right consistency.
Enough with the music, please... The level at the beginning of each chapter, and I do mean each, is louder than the music/voice section and the music while talking really detracts from the listening, which detracts from the learning. I could not complete the video and I really wanted to watch it. It seemed like a well made video except for the music presentation and editing, but. Maybe next time...

You do not need a convection oven! You should set it at 350F.

I find this is perfect for sandwiches. It is quite 'strong' and the crumb somewhat dense.

What if you don’t have a big heavy duty mixer
You can absolutely mix and knead this dough by hand, it just takes a little longer!
Are you using the same ingredient measurements for different size pans. Don’t you have to increase quantity for the lager 13 inch Pullman?
The quantities given is the 13" pan. The smaller ones you'd have to halve the quantities (or split it between two)
Could I use instant yeast or is rapid rise best?
I see no reason you couldn't use instant yeast in this!

Where did you get your spice rack
I made it from two separate purchased from Amazon. A metal notice board and magnetic Spice containers. And just used a labeler to label each one!
I love mine! I could not do without it!

You can, but of course, this will give you a dome top, like a regular white bread, instead of the squared loaf.

I just got a Pullman pan, and it is so difficult to open. Whenever I open it, it scratches the sides. Is this normal?
It sounds like there may have been some mild damage to your pan. Mine slides pretty easily open and doesn't scratch.
