    This is the best natto video i have seen. I made a few batches over the past few weeks with varying results and this video is the closest to my good batches. The temperature is more accurate and fermenting process has no cover and no water and ammonia smell. Great video.

    If you already have natto that's purchased from shop, can you add some of this to the soya beans to get fermentation?

      Yes you can. You can take the frozen store natto and use about 1/4 of it as a starter. BUT... I think the natto spores (nattomoto) makes a better final product.

    are soy beans the ONLY type of bean that can be used for fermenting natto? will mung beans work? any other bean suggestions? also, when I order the natto starter, unopened how long will the starter last if stored according to your recommendation?

      tbh, any legume and grain will work
      ..
      soybeans are just the traditional one

      You can use any kind of bean really, but keep in mind that soybeans are especially nutritious considering it's a complete protein (contains all 9 amino acids)

      You can use other type of beans as well! Didnt try it though, but i have a recepe in which kidney beans are used :)

      You'll have to simmer the soybeans in water in a pot for around 9hrs then.

      You can use standard but be prepared to boil for about two hours till becomes tender .... it is called ‘stone beans’ in our language since it takes notorious long time to cook

    When I eat beans ( a lot as vegan) make me fell blowed and gassy, do natto procedurre reduces this discomfort? Or these bacteria are gassy as well? Thanks a lot!!

      Thank you very much for your comment. I am not sure the reason make you blowed and gassy when you eat beans. But the natto fermented procedure might reduce such kind of discomfort. It worth a try. I hope you will like natto.

      You can also get an electric burner, set it to 100 degrees and stick it in the bottom of your oven. This will make your entire oven warm. Put the natto into a glass container, covered with plastic or cheesecloth.

      You can use the yogurt maker with temperature and time control.
      Mine also came with 8 of 6 oz glass jars.
      Set the temp 104 and 24 hours. Do not put the top on the jars.
      I cover the whole jars with a piece of wet cloth then put the cover on the yogurt maker.( so that the surface won’t dry )
      This video says 45c which is little higher than the way I do. Mine works perfect and I am sure 45c -113f would work also.

      Yeast isn't bacteria. It's a fungus
      Natto is a bacteria.

    Will it work with all beans or does it have to be soybeans? Most if not all soybeans in the US are GMO and have protein inhibitors that are not good for humans. Plus soybeans produce estrogen in men. Not so good for men. Perhaps the fermentation process breaks down the soybeans as to not have these negative effects?

      It work with almost all soybean. As you said, I recommend Non GMO beans for Natto making.

      All beans is ok...try experimenting with small batch...however this is the top 3 Superfood that listed for longevity..and original recipe is using soybeans..
