Ingredients:
4 cups puffed rice (borugulu)
1 medium onion, finely chopped
2-3 green chilies, finely chopped
1-2 dried red chilies
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 tablespoon chana dal (split Bengal gram)
1 tablespoon urad dal (split black gram)
1/4 teaspoon turmeric powder
1 lemon (for juice)
Salt to taste
Fresh coriander leaves, finely chopped (for garnish)
2 tablespoons oil
1 sprig curry leaves
Instructions:
Prepare the Puffed Rice:
Rinse the puffed rice in water and drain immediately. Do not soak it. Let it sit in a colander to drain excess water.
Tempering:
Heat oil in a pan.
Add mustard seeds and let them splutter.
Add cumin seeds, chana dal, urad dal, and sauté until they turn golden brown.
Add the dried red chilies, green chilies, and curry leaves. Fry them for a few seconds until the chilies become slightly crispy.
Onions and Spices:
Add the chopped onions to the pan and sauté until they turn translucent.
Add turmeric powder and salt. Mix well.
Add the Puffed Rice:
Lower the heat and add the drained puffed rice to the pan.
Mix thoroughly, ensuring the puffed rice is well-coated with the onion and spice mixture.
Cook for 2-3 minutes on low heat, stirring occasionally to avoid sticking.
Finishing Touches:
Turn off the heat and squeeze lemon juice over the uggani.
Garnish with chopped coriander leaves.
Serve:
Serve hot with mirchi bajji or as is.
