Here in New York, an omelet with peppers, onions, and ham is called a Western Omelet. Looks good though like everything else you make Catherine.
Omelettes are tricky for me. I wouldn't dare try to flip it like you did. But I usually turn down the heat so it doesn't get too brown and then fold it in half. Thank you for a great demonstration 🌹
It's not difficult. But an easy cheat is to invert a round plate onto the eggs in the pan, flip the pan with your other hand holding the plate in place, and then slide the uncooked side of the eggs back into the pan. But really, flipping stuff in a pan isn't hard if you learn how.
In the 80s my deceased husband would make these, being a chef 👨🍳 they were perfect and better than any restaurant, I wish that he was still here everything he cooked was from scratch. I usually put sour cream or salsa on the top 😋
Sorry that he's still not with you, because people that we will really love are so hard to find. Hopefully, you've got someone new now that you have the same or better relationship with.

Omelets are one of my favorites. I order them a lot when we go out for breakfast. Never was very confident making them they always fall apart. I will give it a try again. Thank you ❤️ for the great lesson. My favorite is Bacon, mushroom cheese I like pepper jack cheese. They are also good with leftover steak.
Yes, very good with those different ingredients. Now, it's TOO EXPENSIVE to get them anywhere. I'm not paying $20 bucks for a stupid omellette.

Tomatoes are a healthier option but I still love hash browns! But a 3 egg omelette filled with all kinds of goodies would be quite sufficient with tomato slices and toast (and jelly)!🤤

Are you still finding Bob Evans Sausage Gravy in a store? I haven't seen it in years, I love that stuff but can't find it. No other brand or even the recipe Bob Evans gives on their website is the same. It's just not.
@@burghbrat3319 they sell the gravy in the stores around hear as well as the sausage's the very active B Evans farm here is just down the road from me, but I have seen the sausage and gravies in Kroger, Wallmart and our local meijer, now I am not sure if it just a Michigan thing or not, I do make my own here at the farm, thanks

Anytime is good for these!!! I like to turn in the opposite ends b4 i start putting the sides together. That way, everything stays inside 😉
Mostly I like them in the morning but I have made them lunch and dinner.
That flipping motion always makes me hold my breath. Frogger, Pac-Man, Pitfall and the queen/king Pong on that sweet, sweet atari.

This was great, Catherine. I love ALL breakfast food any time of the day! And just out of curiosity, would you happen to know of any type of omelette specific to where you grew up in Mississippi? Since it is a Gulf Coast state, would there be a lot of seafood in it?
I don't eat seafood, but I've seen omelets with crab and shrimp and even oysters.

Omelettes are like soup, it's a great way to use up whatever you need to use or lose. Almost any combination of meat, veg, cheese, and seasonings can be used. The Denver (or Western) omelette is a classic, but cheesesteak, pizza, vegetarian, Italian are good options anytime. Not just for breakfast!

Where I am from we call that a western omelet they are delicious
Yes, I've heard it both ways, but here it's called a Denver Omelet.
Thank you for teaching us. It is TOO EXPENSIVE to eat at IHOP, because they want $15 bucks for a simple omellete now. So, we can't go anymore, and need to learn how to do it at home.
--> So, I am not going to pay $20 bucks to go out and eat a stupid omellete, and that's before paying for a coffee, the TAXES, the TIP, and probably some random, unexpected extra charge.

You should use water instead of milk it makes the eggs fluffy and not watery from the separation of the milk.

My daughter and son-in-law graduated from USM.
I’m just wondering sweet Catherine…do you have a bit of arthritis in your hands? I do and sometimes chopping veggies, one of my favorite things to do😢, is quite painful. I only ask because of the way your knuckles look. I’m sorry if that’s invasive! Little story… last summer at work I slammed my fingers in the door of the dumpster, breaking my middle finger in the second joint…2 weeks later I cut the same finger and my first finger to the actual bone on a beet can lid!!! Stitches in both!! These old hands and fingers have been through it!!!!😂😂. PS…I’ve never been able to make a pretty omelette!! I’ll try it this way!!!

When I make omelettes or scrambled eggs, I put my eggs and milk in a shaker / blender bottle and shake the sh!t out of it. It makes the eggs really fluffy and pretty.
If you set your heat on low and cover the pan with lid you don't have to flip the egg over
