If God only creates good things, then why did He create the pig to be unclean? And if they cannot be touched once they're dead, then how could the pig's heart valve be harvested and placed into someone and have then both be considered clean?

Rubbish. The prohibition is eating the pig NOT using its body parts to save a life. If its heart valve is used, that does not involve us eating the Pig.
