So glad you went to Mexico, finally, and that you experienced true Mexican food. One thing about huitlacoche, the corn smut, the slight sourness disappears with time. So, if cooked and left to sit for a day (like marinades) in the fridge, the sourness disappears and sweetness is highlighted. Due to the French occupation in the mid 1800s, we have crepes in Mexico. A great way to have huitlacoche is cooked with diced poblano peppers, regular corn, stuffed in crepes that are doused with a poblano-cream sauce and covered with Oaxaca cheese.

@@hoz49 Not sure - if you are not in Mexico, you can buy it in cans - and I used it several times in cooking.I had it (and also did myself) tacos. Which were really delicious.
I think it is not weird at all. I mean we Westerners are eating cheese - some really funky blue cheeses - this is also mold. (huitlacoche is also a mold which just happen to attack the corn kernel).
Probably you want to eat it in a good (fine dining) restaurant... chefs really usually embrace odd ingredients, and make them delicious. Street food usually are rather pragmatic...
