I just came across this vlog today which was posted 2 years ago (?). Of course, I got intrigued by the smoothness and color of the caramel! There were lots of questions that… I don’t know if got answered or answered by DM…. But please indulge me if I put my 2 cents worth! And maybe answer some of the questions in one lonnnnggg comment. Leche Flan… I think is one of the easiest… if not the easiest dessert to do. Basically, it only requires 3 ingredients… not counting the caramelization… which can require only 1 ingredient (sugar) or 2 (sugar and water). I have never been successful doing the sugar and water but I have not done it this way (melt sugar then add water). I have done this process with my Fresh lumpia (which makes a big difference than just melting the sugar in the water and the other ingredients all at the same time). Back to the leche… do the caramel first. It needs to harden (like a toffee or candy consistency). Next is the leche itself… like I said, 3 basic ingredients yolks, evaporated (or fresh milk) and condensed (or sugar). Often, the ratio is 12-1-1; 12 yolks; 1 can evap/milk ;1 can condensed/sugar (yes, if substituting milk or sugar… use same measurements or to your taste). Mix all together… no muss no fuss! Doesn’t matter which comes first (the chicken or the egg). Addition of optional ingredients is up to you. Add vanilla for flavoring (1 tsp). Add lemon or lime zest (1 tsp).. even orange zest… to mask the eggy flavor… and to extract the essential oils of the fruit. Rest or steep the mixture for a few minutes… then strain, strain, strain using fine wire strainer. This can prolong your process. If not using zests… it can be strained right away and steamed right away. The more you strain the better but 2-3 times should be good. For a more elegant leche… you may even add sweetened macapuno strands or jackfruit (lanka)… just dice finely. That’s it… but for me… I boast of my leche flan as low cholesterol and diabetic friendly… why? Because I only use 6 yolks, 1 can evaporated or fresh milk and only 1/2 can condensed milk or sugar. The basic recipe… 12-1-1 is supposed to make one llanera … (maybe a little bit more for a smaller size) depends on the size of your llanera... can you imagine all that cholesterol in one llanera? My recipe cuts the cholesterol and sugar in half… ergo… low cholesterol and diabetic friendly! Llaneras have to be covered with foil to prevent water getting into the flan (no need to put cloth in the cover. Or vice versa… use a cloth in the cover and no need to cover the llanera with foil. Leche can be steamed or baked. In baking, use a Bain Marie or water bath; cover llanera with foil. Both process takes 1 hour to cook the flan for a softer consistency. Bake longer for a more dense consistency… but it’s should be cooked in 1 hr. What else have I not covered? (???)… ah… it is best to use a stainless or aluminum pot in caramelizing so you can see the color turning golden brown! … dark non-stick Teflon is not advisable…. next thing I will do is try the caramelization and melting back with water. I have been doing the caramelization straight onto the llanera… I think I went over my 2 cents worth already… Hahaha… Sorry po!

Yes po.. grated yung balat, then lalagay sa mixture..then more or less 4x sasalain yung mixture..bago iluto para sure na wlang nka samang balat.. use fine strainer... :)

its not separated, its just the procedure po.. if mix water and sugar immediately your sugar syrup will show granules and will not be smooth... first you need to dissolve the sugar first before adding water... just follow my video as it is and youll get the same end result as my leche flan po... :)

Question why you didnt put the water straight ahead? Does it have any rationale comparedti melt the sugar first then put the water?

i used medium size llenera.steaming time 1 or more hour :)
