- MY NANAY'S LECHE FLAN
10 egg yolks (use XL / Jumbo yolks, or add 1 to 2 more if using medium)
1 tall can evaporated milk
2 cans (380/ 390 grams) condensed milk
zest of 3-5 Dayap, OR zest of 2 lemon
2-4 tablespoons sugar per Llanera (leche flan mould), for caramelizing

Yung tinutukoy ni nanay ay yung techniques sa paghahanda at pagluluto from ingredients to finished products, meticulous and matyaga na proceso, that makes the diferrences in outcome of dishes. Fast-paced na kasi mentality and approach ngayon kaya may pagkakaiba talaga even with same ingredients used. This also displays the generational differences. Your nanay is very cool she knows the little things of cooking a very raw techniques. I know it's very hard to cook the lecha flan pinoy style. I have tried many times but your nanay said is the way how to make it in a gentle manner I agree.
