The accident you refer to was not at Enniscorthy. It happened at Harcourt Street terminus in Dublin. It involved a cattle train from Enniscorthy. It happened on St.Valentines Day 1900.
I recommend you travel to Cork and Mallow . At Cork there’s two lines to Middleton and Cobh they run alongside the sea and are like a Irish version of the werry lines. Great video .
The line from Rosslare Europort to Rosslare Strand (and the line from there to Waterford) is still 50% owned by a small UK company subsumed within Stena Line, this dates back pre BR to the GWR. It's the only surviving heavy rail line in full commercial operation in the ROI that isn't owned entirely by Iarnrod Eireann #trivia
