  • I decided to try kangaroo meat for the first time and here is my review and taste test.
    Surprisingly I really enjoyed the kangaroo steak and would definitely eat it again. Let me know, what animal should I try next?!

    Aussie here.
    Definitely try your Kangaroo with a side of creamy mash potato & an absolute must is your favourite BBQ or Hot chilli sauce.
    Also goes great with Cajun spice as well.

    Kangaroo needs to be cooked really rare. It's like 99% fat free meat so there is not much resistance to overcooking.
    Upside is it's super healthy, super high protein, low fat.
    Downside is it's really easy to overcook it and make it tough.

    If you want it tender, you need to slice those fillets in half before cooking to make them a lot thinner: It's all muscle, no fat, so it thickens as it cooks and you need to cook it medium rare or it's too tough. Six minutes is too long. Thinner slice, then 1-2 mins each side, then rest. I've cooked it a lot and even I get it wrong sometimes. It's an art.
    Also, avoid the kangaroo sausages - due to the lack of fat, these are rubbery and dry and don't eat well.

      With tough sheep meat they let it marinade in yoghurt. The acidity turns the meat soft.

    I had kangaroo steak once - it was DELICIOUS. And so tender. It was actually on a pizza! I'm not sure how to cook it but as someone else mentioned, I think it has to be cooked quite quickly. I also don't remember it being very rare but maybe it was...

    I think you've actually undercooked it. When it's undercooked it's very chewy. When it's overcooked it's very tough. You need to target a middleground.

    I made chilli con carne with kangaroo meat a few weeks ago, it worked well since the meat is both tough and gamey
