    Ingredients:
2 cups of rice1 1/2 gallons of waterSeafood of your choice (such as shrimp, squid, fish, etc.)Optional toppings: sliced green onions, crispy fried shallots, chopped cilantro, sesame oil, soy sauce, white pepper
    Instructions:
Rinse the rice under cold water until the water runs clear. Drain well.In a large pot, bring the water to a boil over high heat.Add the rinsed rice to the boiling water, stirring occasionally to prevent sticking.Reduce the heat to low and let the rice simmer, uncovered, stirring occasionally, for about 1 to 1 1/2 hours, or until the rice has broken down and the porridge has thickened to your desired consistency. While the porridge is simmering, prepare your seafood by cleaning and chopping it into bite-sized pieces.About 15 minutes before the porridge is done, add the seafood to the pot and continue to cook until the seafood is fully cooked through.Once the porridge is done, season it with salt to taste.Serve the Cantonese rice porridge hot, garnished with your choice of toppings such as sliced green onions, crispy fried shallots, chopped cilantro, a drizzle of sesame oil, soy sauce, and a sprinkle of white pepper.Enjoy your comforting and nourishing Cantonese seafood rice porridge! This recipe serves about 6-8 people, but you can adjust the quantities of rice and water according to your preferences and the number of servings needed. Adjust the thickness of the porridge by adding more or less water as desired.
