    I suggest eating rice porridge in a small bowl. You can refill it several times but don't dish it up with the spoon you are eating with. This is because your saliva breaks down the rice porridge and make it runny if you eat it for too long from the same bowl.

    I love porridge! Definitely the food all Vietnamese thinks of when they're sick. Way better than chicken noodle soup, but then again I am being very bias :)

    What kind of chicken stock do you use in all your cookings? I notice your chicken stock is more grainy and the one I use is more on the powder side. Thanks for the recipe!

    When I was live in Vietnam, I usually ate chao ca. But that was made noodle. Do you know how can cooking that?
    I was live in Dong ha in Quang Tri.

    I am so happy to find this video as I have enjoyed eating this porridge so much in Vietnam and want to make it at home. But in this point I am so confused: how can the name be cháo cá and the pronunciation be con chi?

    The best fish for this recipe is snakehead fish or grouper fish.

      moonlight I think it's pretty good with specifically fish congee. Brightens up the dish and lessens that "fishy" flavor just a little. It's pretty good with or without lemon, though. (:

    Hi Helen. Love your recipes! Does it have to be freshwater fish, or can I use ocean fish? (I am from Sydney and we have heaps of seafood but freshwater fish is hard to find).

      +Unfinished Business In VN we prefer freshwater fish as it is not too fishy. But ocean fish is fine, too.

      Nồi áp suất thì như nồi bình thường thôi bạn, nhưng nồi áp suất thì nấu lâu hơn, cháo dễ bị nhừ và nhão

      Congee (in chinese) or Chao (in viet) is best with ground pork, IMHO. Unless you're muslim. Never care for fish porridge. You can also try plain porridge with various kinds of sugar.

      cổ nhân dùng cá lóc, cá lóc thịt dai, thuộc trung tính nên dể nấu, người bác trước khi nấu chiên sơ cá lóc cho khỏi bể thịt khi nấu cháo, người nam thì trước khi nhắc nồi cháo xuống 15p họ mới bỏ cháo vào, vì họ mún hưởng nguyên vị ngọt thanh đạm của cá và mùi thoang thỏang của cá lóc, hông bít bạn vùng nào để ra cho đúng theo khẩu vị của bạn

      +Shikapham cá lóc thuộc nuôi và hay cá lóc sống môi trường tự nhiên ở ao, hồ, sông, cá lóc nuôi thường ruột nó có tí mở, còn cá lóc đồng thường thì hổng có, để nấu cho 1 nồi cháo cá lóc ngon, bạn phải khử mùi phèn của nó bằng cách làm sạch máu ở bụng cá, dùng hành tươi và gừng tươi bóp lấy nước thoa đều lên mình cá, để đó khỏang 20 phút, bạn nhắc chảo dầu lên đợi cho dầu xôi bạn lấy dầu đó chan hay dưới đều lên mình cá, như vại sẽ khử được mùi phèn của cá mà hông mất đi tươi ngọt của cá lóc, enjoy urself !
